Beef Albondiga Soup with Vegetables

Albondigas is a traditional Mexican meatball soup, served in light or hearty tomato sauce with various vegetables. There are many variations of this recipe, and today I will share my way on how to prepare this delicious soup!

Albondiga Ingredients:
2 Lbs Lean Ground Beef
2 Garlic Cloves
1/4 Onion
1/4 Cup Finely Minced Cilantro
1 Tsp Black Pepper
1 Tsp Salt
1/4 Tsp Cumin
1 Cup Pork Panko or Bread Crumbs
2 Large Eggs
1 Cup White Rice
Sauce Ingredients
12-13 Cups of Water
6-8 Roma Tomatoes ( I used 6 in the video and ended up using 8 )
1 Serrano Pepper (optional)
1 Chile Guajillo
3-4 Chipotle Peppers with 2-3 Tbsp of the Adobo (also optional)
2-3 Garlic Cloves
1/4 Onion
1-1 1/2 Cups of Water, Chicken, or Beef Broth
2-3 tbsp Chicken, Tomato, or Beef Bouillon (I used Chicken)
Handful of Cilantro
Vegetables:
3-4 Carrots
3 Potatoes
2 zucchini
1 Large Chayote Squash
You can also add or remove any other vegetables of your choice!
Ingredients for Rice
2 Cups Long Grain White Rice
1/2 Onion
1-2 Large Garlic Cloves
4 Cups of Water
1-2 Tbsp Tomato Bouillon
Pinch of Cumin
1/3 Tsp Oregano

What a great idea, adding the rice to the bottom of the bowl before you fill the bowl with albondigas, I've always served it on the side and then added it a little at a time. I can see where the soup would be much hardier and tastier. Thanks for sharing that tip.

I have been looking for the recipe for that soup for a while. I saved it to my favorites and will make it at a later date. I give my dogs plenty of scraps from the table myself. Is that a schnauzer you have? If not what kind of puppy do you have? If I cannot get that kind of squash. What kind of squash can I use to substitute it with? Yes, she is a schnauzer and although she loves human food there are certain foods she can’t have. I have two other fur babies, a shitzu and a Maltese. You can substitute with regular zucchini if you can’t find Calabacitas and the chayote can be left out.

I’m asking albondigas tonight and I forgot the zucchini! So mad, lol. But I add mint and egg but next time I gonna try cilantro and I really am curious on your sauce base. And yes I always feed my dog human food(safely). It tastes better and it makes her happy. ❤

This is an easy deluxe recipe..thanks. You know dogs will bring home dead deer heads, rotten opossums and whatever they might find in the woods and eat them. They also eat vomit and shit. They survived for thousands of years off of whatever we gave them before dog food was invented. So don't let some one tell you that the occasional table scrap is bad for them...please.
