My suggestion for the grass/dirt block issue is to set the dirt blocks one block level lower in the water. The benefits are that there is a small half step down from the stone half slab to the dirt block giving the area a touch more definition and making a flush finish. _
Hey Beef, for the horse pen, why not drop the grass down the extra block so it would step down from the quartz, to the stone slabs, to the grass. It'll still be covered by the slabs around the outside and it would add another level depth to the lily pad!
You could put two iron golems on leads and station them on the entrance of the village. If there are zombies going into the village they will get killed. I don't think zombies would drop into the village if there is a valid path into it....

Move the dirt a block down to water level, and scrap the fences, lower the slab to the top of the block, and two blocks above, put another one, so there is a two wide gap. The horses won't leave due to a glitch.
There is diamond horse armor for your horse in the desert shack. And maybe you could go make the path from spawn to the lily? Or do a co-op with someone who you didn't do a episode with before, like Arkas or Jims?
you should ask BTC or Bdubs to make big pixel art versions of the specific mob on top of each of your lilypads so you know what's what without having to go around and find the right one

Hey Beef, why don't you use a minecart chest to move stuff? You could have a couple, and then also a regular minecart. It'd be faster I think. Also, you should put dark oaks on your roof. Nice, large 2x2 trees would look cool.

Just a little story, not to promote a channel or anything but just how Beef helped me. Now that comments can be longer, here goes. About a year ago, I only watched You Tubers like Pewdiepie Tobuscus and UberHaxorNova and hated the game Minecraft. So, on Oct 28 2013, I woke up and saw Nova had uploaded a Video of a game called Chivalry. It looked awesome and I wanted to watch more, i searched "Chivalry" and found some videos from a guy called VintageBeef.He was playing with some random people i didnt know, Guude and Pause. I watched some of his Chivalry vids and then clicked on his channel to check how man subs he had because i found him hilarious. He had about 100,000 subs. I scrolled down his videos looking for Chivalry and kept seeing Minecraft everywhere thinking "Ugh, crap game" but out of boredom, I clicked on a video called Beef plays Mindrack Server S2 Ep141. I fell in love with the game and his suttle humour. After watching his vids for over a year, I went to minecon and met him. I am thinking of making my own channel and if anything happens out of it, i will have beef to thank. Just goes to show how big of an impact one tiny thing can make. I'm gonna stop typing my fingers hurt...
You could name your horse; Frosted Brownie, PauseNotUnpause, Forest (Run Forest run), Notchs Spot, Lily (short of Lilypad :p), Marilyn(Marilyn Monroe), Beatrice (In memory of Beatrice the cow). ^-^
You should make a viewing pad elevator. Maybe a water like version CN Tower thingy ^^ (The VB Water Tower ^.~) with a glass floor and siding so others can come by and see the birds eye view without having to pillar up (would make it easier for you to view then you can just jump off into the water or make something to descend in as well.). Still you make beautiful things ^.~ I look forward to seeing more.
Beef you should name your horse Night Rider like Knight Rider because you can ride him and his skin/fur is dark so it looks like night and his spots look like stars
