Since I started making your weekly recipes for the last year (especially when COVID shut my business down for 4 month so I had tons of time to learn) my family loves the weekend when I can make the food for them! BUT my relatives, inlaws and outlaws....stay LONGER, extra DAYS because they want me to keep cooking! I might have to set up a backyard/deck restaurant for family and start charging lol God Bless Mr. Rollins thank you!

We raised our beef in Arkansas, grass fed and corn & cotton seed hull finished, great marbling. We used everything from the tongue to the tail, lots of kids. Ribs were the summer treat for me.

My in laws up in Cashion gave us half a steer, a lot of rib cuts in the freezer, usually I do braised, but going to have to try this.

I've been told that when you let cilantro go to seed those seeds are coriander. When you grind up coriander it becomes cumin. Three spices from the same plant.

Now I gotta say I love ya Kent and Shannon, but I’m just having lots of issues with Angus beef. I understand the history, even a guy named Stuart Anderson, from Seattle, who opened restaurants “Black Angus” and there were others, and his big Montana Ranch growing these beasties in the 80’s. I just love me some USDA Prime over what I think is boutique beef. I’m just not fan, and besides the grocery meat tastes like cardboard not terrific honest meat flavor. All the grocery chains in my area only have Angus including Wally World I buy my meat from an independent butcher. Sorry about my rant just had to put my 2 cents in, but this video is really educational. Thank you for all your videos.

I saw you on Mike Huckabe’s show about Sloppy Joes. I absolutely love grilled or smoked Beef Ribs with a good char on them but like you stated I have not seen them in any stores up here for years. The best ribs I ever had were bison ribs that I had smoked better than any restaurant. I envited a couple of friends over, and one declined and the other reluctantly showed up. The ribs were the size of dinosaur ribs and juicy, well my buddy had to have seconds. Better than pork or beef. Bison is the best.

Another style I see a lot of, "Franken ribs," cut the other direction, across the bone, under a half in H thick, cut right through the ribs. This puts a new meaning to, "bone in," because you get all kinds of Bo E dust in the meat. I've brushed and brushed, can't seem to avoid chewing on small flakes of bone from the band saw. Kent, you should talk about these... or not. This style of ribs le ds itself to Korean style barbecue. Affordable often times I just picked up 6 pounds, $3.50 a pound, that's a bargain in California. I decided to be different, and make the marinade, "Cowboy style." I'll get me a rack or two of premium short ribs in the next couple weeks, make my Mother's mighty fine barbecue sauce. Butcher paper, great idea.

I dont have a smoker but I have made beef and pork ribs in my instantpot (pressure cooker) and they are super tender but just not charred like yours. Next time i hope to try your seasonings. yummo!

Kent , come down to New Braunfels Tx. We have Granzines Meat Market. They will cut you these ribs if they aren’t in the cases. They smoke their own handmaiden sausage. Every time I go there it reminds me of going to the meat market with my Granddad when I was a Kid. I know do this with my oldest Grandson. He loves to BBQ almost every weekend. If you can’t Eat Smoke, you ain’t BBQING!

I tried this for the first time last year and it was a complete fail. Looked beautiful coming off the grill but way too tough and we trashed it. I've smoked a lot of meat lately but this last Spring I told the butcher remove the short ribs from my list but I added "tri-tip". I hope it works out better. God bless y'all.
