Ingredients:
1 lb ribeye steak, sliced into thin strips
1 large onion, thinly sliced
2 cups mushrooms, sliced (cremini or button mushrooms work well)
1 tsp paprika
1 cup heavy cream
2 tbsp Dijon mustard
1 tbsp Worcestershire sauce
2 tbsp butter (or olive oil)
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Egg noodles or rice (for serving)
Instructions:
1. Prepare the Steak:
Slice the ribeye steak into thin strips. Season with salt and pepper.
Heat 1 tbsp of butter (or olive oil) in a large skillet over medium-high heat.
Sear the steak strips for about 1-2 minutes on each side until browned, but not cooked through. Remove from the pan and set aside.
2. Sauté the Onions and Mushrooms:
In the same skillet, add the remaining butter.
Sauté the sliced onions and mushrooms for 5-7 minutes until softened and slightly browned.
Stir in the paprika and cook for another minute to release its flavor.
3. Make the Sauce:
Lower the heat to medium, then stir in the Dijon mustard and Worcestershire sauce.
Add the heavy cream, stirring well to combine.
Let the sauce simmer gently for 3-4 minutes, allowing it to thicken slightly.
4. Return the Steak:
Add the seared ribeye steak back into the skillet, along with any juices from the plate.
Stir everything together, making sure the steak is coated in the sauce.
Simmer for another 2-3 minutes until the steak is cooked to your desired doneness (medium-rare is ideal for ribeye).
5. Finish and Serve:
Taste the sauce and adjust seasoning with salt and pepper if needed.
Sprinkle freshly chopped parsley over the top for garnish.
Serve the Beef Stroganoff over egg noodles, rice, or mashed potatoes.
