Hi Catherine, I love Mexican food and casseroles and this is the best of both worlds so cheesy and delicious and the fresh tomatoes on top the perfect addition.
Looks so delicious. I'm going to make the meat/cheese/sauce mixture and make taco stuffed peppers instead. I cant have the flour tortillas because of insulin but I can even top the peppers with sour cream! Yum!
I’ve always soaked up the grease with paper towels too, but hoped nobody was ever watching because I didn’t know how sanitary that was… but since you do it too, I guess it’s ok.

When do you choose to use your induction unit instead of gas cooktop? I love my gas cooktop, but it really does heat up my kitchen, and the cook as well. I have never used an induction unit but considering the purchase to save on natural gas bill and to keep kitchen (& cook) cooler, especially in summer. What do you think?

Mexican food is my favorite food to eat. This dish looks amazing and so cheesy and yummy. The only thing I would do different is I would use corn tortillas. I would also serve it with some sour cream and some guacamole.

You can use corn tortillas deep fry them first don't let them get hard just soft and then add your cheese your chili your meat and then just keep layering them whether you do red or green very easy but very tasty I am from Albuquerque New Mexico and that's how we make stacked enchiladas and then you can use your flour tortillas warmed up really nice and use those as a to eat it together with your enchiladas like if you were eating bread but it's tortillas that's the new Mexican way

One of my favorites again! I love chopping up tomatoes and avocados and put on top of Mexican dishes. I often use the diced green chilies but I didn't know if you were aware there is a Hatch pepper version. Thomas would probably love it but most of us can barely tolerate half of the little can. Texas does get fresh hatch peppers for 3 weeks in August. They're unlike any chili peppers you've probably ever had. I made chilie rellenos one year with the fresh Hatch peppers. While they have a great flavor, the heat can blow off the top of your head. And I found they get even hotter if the dish is frozen then reheated. I ended up giving all the frozen ones to my nephew (he's just like Thomas when it comes to heat). Sorry, I got a little sidetracked. But yes to anything with beef, tortillas, chilies and cheese. Lots and lots of cheese!

Catherine is there a reason I can’t find this printed recipe. To hard for me to write as you are talking. Looks so dang awesome & my family loves the flavors of these type of meals. Our favorite “restaurant”, and I say that loosely, is Taco Bell, lololol seriously.😅
Well he'll. It doesn't call for green chilies .... I just made this... With a small can of green chilies added to the meat.... I've probably ruined it.

Finally getting around to making this right now.. was out of fresh tomatoes so I added a can of tomatoes with green chilies and also a can of black beans and corn 😋 had already made pinto beans Sunday, so I made my own refried beans.. was also out of sour cream 😔 but added mayo instead and it worked out fine 😊 thanks again 🥰
