Growing up in Belize, the first thing that comes to your mind when you hear about “Green Corn” is “Dukunu”. People go crazy over Dukunu! I can’t find any Green Corn where I live but I’m making it work with what I have.
⬇️⬇️⬇️ RECIPE BELOW ⬇️⬇️⬇️
👩🏻‍🍳 BELIZEAN DUKUNU
6 ears sweet corn (about 6 ½ cups kernels)
7 tablespoon margarine
1 ¾ teaspoon salt
1 ¾ cups fine cornmeal
*Be sure to measure out the kernels after you cut them off the cob. This will determine how much margarine, salt and cornmeal to add. For every cup of corn add (1 tbs. margarine, ¼ tsp. salt and ¼ cup cornmeal).
If I don't have an even number of cups, I always round up to the next cup. For this recipe I had 6 1/2 cups of corn so I just added margarine, salt, and cornmeal as though I had 7 cups of corn. Hope this helps. Good luck!
*If you are using Green Corn aka Field Corn there is no need to add cornmeal.

I don't know if anyone mentioned this, but just to clarify, in Belize we don't refer to these as 'Corn Tamales', they are simply called 'Tamalitos' or 'Dukunu'. Here in Belize there is a HUGE difference between Tamales and 'Tamalitos' or 'Dukunu'. I hope this comment makes sense.

Hi Justin, I know it's called Dukunu in Belize. I only put Corn tamales in the title for search reference because in other cultures it's know as that.

The word dukunu comes from the akan in Ghana west Africa. Dokonoo is another word for kenkey it’s fermented cornmeal and more sour. The work dokonoo means sweet in twi.

Interesting, if I'm not mistaken, I believe the word 'dukunu' in Belize is actually the Garifuna translation for this dish. If you're not familiar, they are a ethnic group that migrated to BZ from Honduras decades ago, but they have very strong African roots which is evident in many aspects of their culture.

I am so happy I found your channel! I am definitely trying these recipes. My wife is from Belize and I have visited often. Many of her family members live in Houston. Her immediate family live in Belize City. Delicious food!

Shirani.... I agree with you 100% cooking most Belizean recipes in the US never the same as home and all related to corn don't come close. So frustrating. I was so glad to hear you say it.😊❤❤

Thanks for sharing. Your voice is so calm and soothing, a perfect teaching voice. I notice you didn’t add bell pepper, onion or fried bacon/ pork belly. My mom always used to add those. Now I’m Wondering if that’s authentic or just her own thing.

I'm glad you talked about how it never come out the same in the states. When trying new recipes I always wonder if it is the same as authentic but I was always suspicious of the differences of food quality and consistency in comparison. I would never expect american food to be as good.

I have the same experience. I love belizean food, but it never tastes exactly the same way as back there.. I lived 14 years in Belize. So we da fu Belize fo reel!♥️🇧🇿greetngs from Canada 🇨🇦

Punta Gorda Pine Hill around that area Spanish Lookout Barton Creek from were are you I really love going back and forth but this year we can't next year my dad and my mom said we will go there again I know I love those Belizean tamales the rice and beans it's just so good the weather I love it there 🥰🥰❤

Thanks for this idea of using the corn husk for my Jamaican dukunu. Don't have our traditional banana leaves to use, and dont care for the idea of using foil.

I love Dukunu, had it in Belize. I would love to try and make it. I have a question: Why don’t you use butter, margarine has no flavor. Also, why don’t they grow green corn here??

I use margarine when I make my Belizean recipes because that's what we would use back home and mainly because that's what's available at the stores. I have no idea why they don't grow green corn here.

@@CookingwithShirani You don’t have butter in your stores?? There were only a couple of things that were unavailable here for a while, but now those are back. Still worried about shortages coming. Just curious, can I ask what state you live in? Other cooking shows have complained about shortages. We need green corn seeds! I pointed to a Dukunu to order and thought I was getting something like a tamale. Surprise! It was a Dukunu. YUM!

I noticed you said when in Belize and there you have to adjust your recipe and since you over there meaning it has to adjust a little bit here in Belize? Is it safe to add a bit of corn meal to the field corn just because of being scared it might not firm up? Or that'll let it be dry?

Hi Shayanta, I meant I have to adjust my recipe here in the States. No you don't have to add cornmeal to your field corn. It will firm up.

I made this tonight and used coarse cornmeal and it didn’t come out smooth. Next time I will get fine grind cornmeal. Your ingredient list didn’t specify but there was a huge difference.

I'm sorry to hear that. I didn't specify because the stores I go to only sell fine cornmeal. I've never seen coarse cornmeal so it never crossed my mind to specify. Thank you for letting me know. I'll update the info.

Omg...ducunu is my fav food ever and did not know it was this easy to make. Will definitely try. Since I'm from belize and can get the green corn, what do i need to put in it vs the sweet corn recipe?

Hey Ollie, it's one of my favorites also 😊. Since you can get the green corn all you have to add to it is the margarine and salt.

Hey u know why ppl add coconut milk? And will the texture be firm when finish if I use the field corn n no corn meal? Also is it moist cz I heard if boiled too long it can be dry. Never tried before n really wanna know.

Hey Girl! I have never heard of anyone adding coconut milk, atleast not in my family. Once you use field corn the texture will be firm and the butter will help it to stay moist.

I'm sure you can but I have never tried it. The thing I like about using the whole corn is that I can use the husk. I feel like that adds a lot of flavor to the Dukunu. If you do try it please let me know how it turns out.

I think it could be the type of corn or if you cut too close to the cob.
