It doesn't matter. You can also write curly(z)/curly(s) but since z depends only on s, partial and complete differentiation carries no difference.

@@Fillipe_Mendes you are right. In aerodynamics we use to neglect body forces, so there is no g terms in our analysis, but it can appear in our calculations when we want to refer it to a global coordinates!!!
