Besan ki Sabji I पनीर से बेहतर है ये बेसन की सब्जी I Pankaj Bhadouria

This besan ki sabji is extremely delicious and tastes better than paneer.
For this besan ki sabji, the besan is mixed into a batter with spices, cooked till it thickens, set, cut into pieces and then added to a gravy.
Besan ki sabji is known with many names all over India- pitod, rasaje & dhokar dalna too.

Recipe :
Besan Ki Sabji
Preparation time: 20 minutes
Cooking time: 20 minutes
Serve: 3-4
Ingredients:
For Katli:
2 cup besan
2 ½ cup water
½ tsp turmeric powder
1 tsp red chilli powder
1 tbsp ginger garlic paste
1/2 tsp salt
1 tbsp oil
For Gravy:
1/4 cup oil
2 bay leaves
½ tsp cumin seeds
2 black cardamoms
3-4 cloves
1 cup finely chopped onions
1 tbsp ginger garlic paste
1/2 tsp turmeric powder
½ cup tomato paste
1 tsp red chilli powder
1 tsp garam masala powder
salt to taste
1 onion, diced
Method:
Mix together all the ingredients for the katli.
Cook the mixture in a non stick pan, stirring constantly, till the mixture comes together to a ball consistency.
Immediately remove to a greased plate and flatten the besan to a thickness of ½” . Cool and cut into pieces of size of your choice.
Heat oil in a pan. Lightly fry the pieces till a little coloured. Remove the katli.
To the same oil, add the whole spices and allow to splutter. Add the chopped onions and sauté till golden. Add the ginger garlic paste and mix well.
Add the powdered spices and mix well.
Add the tomato paste, salt to taste, 1 cup water and mix well. Bring to a boil. Add the besan pieces, diced onions and simmer for 4-5 minutes.
Remove from heat and serve.

Hi... This recipe is really yummy... But we jains are used to make this without any green vegetables.. Instead of tomatoes we use dahi... Its tastes really good... We call it "Dhokli nu shak" We make it on our tithies day like ASTHAMI AND CHAUDAS ITS MY favorite...

Dhokar dalna is never made of besan. Its made out of chana daal. Soaking overnight and then grinding it. This is misguiding and misleading

Very Nice. This is a Gujarati Dish. We call it Dhokli nu shaak. One step you should avoid is to fry the Dhokli. It is not necessary. Dhokli absorbs more masala without being fried and less oil. We just cook the masala till it softens, add water and add steamed dhokli. Try it. It is healthier with less oil.

हम लोगो के घर में तो हमारी परदादी के समय से यह सब्जी यानी रसाजे बन रहे पर इसकी ग्रेवी में टमाटर नही डालते आजकल यहब्जो चलन होगा की हर ग्रेवी में टमाटर गलत हालांकि आप लोग बहुत महान शैफ कहलाते पर अप लोगो के मसाले में सब वही एक जैसी चीज तरीके होते जा हम लोगों अपनी दादी से सीखे वह सब बिलकुल उस जमाने के पारंपरिक तरीके से बनाते जैसे आप लोग हर डिश में टमाटर कसूरी मैथी use करती जिससे हर जिस की ग्रेवी एक जैसे ही बनती जबकि पारंपरिक तरीके में बहुत छोटे छोटे वैरिएशन से सब का स्वाद निराला और अलग होता😊

Dhokaar Dalna is made by soaking Chana Daal and Grinding it. Of course, the origin of ingredient is the same - Chana. I have yet to come across bongs using besan to make DD.
