I was searching for a "white" cream cheese frosting for my nephew's wedding cake because his fiancee wants red velvet. I thought I would have to use cream cheese in between the layers and buttercream for decorating. Thanks for the pro tip with the violet food coloring. I will experiment with that before the big day!
You are so very welcome! I’m not sure if I mentioned this in the video but another tip to get whiter frosting is to use a brand of butter that is lighter in color. I have found that Land O Lakes is nice and light, less yellow. If it still isn’t white enough you can also add white gel icing color but I would add the violet gel icing color first.👍😃
Yes, it can be colored and yes you would use gel icing color. If I need to buy it quickly at a store, I use Wilton brand just be aware that some of the darker colors can have a bitter taste so for example if you’re using red I buy Wilton “no taste red”. If you can buy it online, I recommend Americolor brand. They are really good about making sure none of their colors taste bitter and they are available on Amazon. If the frosting isn’t turning out the color that’s on the bottle, it could be because there’s too much yellow in the frosting to start with so you can add just a very tiny bit of purple to cancel out the yellow if you’re having trouble. (It is also helpful to use a brand of butter that is less yellow.. Land O' Lakes is pretty light) Also be aware that as frosting sits for a little bit it oxidizes, and the color gets about a shade darker. I hope I didn’t overwhelm you with too much information. 😂 The only really important thing you need to know is that you would use gel color not liquid color like you said. 😊
I am going to try making the sunflower cupcakes that you posted on another one for your videos and will make this Cream Cheese Frosting and then dye it yellow for the sunflower petals. About how many cupcakes can I frost using this frosting recipe. I need to make 60 Sunflower cupcakes for an event we are having and I need to figure out how much frosting to make.
