He was a high school math teacher for 10 years..imagine! He is an excellent teacher (I'm a retired teacher) His voice is so relaxing and we can always dream of baking his recipes..I do some..all very successful. My granddaughter likes to bake and is a fan..she requested his first book as a Christmas gift. I am going to preorder his new book for one of her birthday gifts.
I've made these twice now. The first time, I used softened butter, sour cream, and lemon juice using his suggestions. The second time, I used half melted butter, vegetable oil, and buttermilk following his suggestions. The second time, the muffins were so much better. They were so soft and tender with just the right about of sweetness.
Me too, I use butter in all my baking but unfortunately butter is very expensive and costs €3. 39 a lb in Ireland so I’m going to give your recipe a go. As a matter of interest how much does butter cost in the US
@@ruthdoyle3572 The cost of butter in America depends on what state you live in and what brand you buy. I live in Kansas, known as the midwest, middle of America. The food prices here are better than most states. Butter in my local store starts at $3.75 and goes up to $6.00 a pound. Most of the time I shop in the city that's 1 hour away because lots of the food I eat is less expensive. Butter at Aldi, a grocery store, is $3.40. In other stores in the city it is $6.00 a pound. So the butter isn't really the reason I go to the city for groceries.
Blueberry muffins(makes 12): *Preheat oven to 400°F(200°C)* 2 cups(240g) all purpose flour 1 tsp salt 2tsp baking powder 1/2 cup(113g) unsalted butter(room temperature) 3/4 cup(150g) granulated sugar 2 large room temperature eggs 1 whole lemon zest(optional) 2 tsp of vanilla 3/4 cup(180ml) of milk 8 ounces of blueberries Place muffins in the tin Optional: Add some sugar on top Or streusel topping: 1/2 cup(60g) flour 1/2 cup sugar(100g) 1/4 cup butter Pinch of salt Bake at 400°F(200°C) for 20 minutes or until they are puffed and golden (You can add a ramekin with water under the muffins in the oven so that they don't dry out due to the high temperature)
I've tried several Blueberry Muffin recipes but this is by far the best. I used 1/4 cup of butter and 1/4 cup of veg oil. They stayed moist and fluffy for a couple of days before they were all gone. Thanks John. I will be making the Strawberry cupcakes tomorrow.
In New England it’s traditional to cut the blueberry muffin in half, butter it and put it on the grill to brown it. Simply delicious. Thanks for the recipe.

Ok this is my favorite baker. Him and cakes by MK are the best bakers and the best teachers. I make this muffin recipe for my family with a little less sugar but it's really thr best muffins out there. He just makes it so simple and delicious for us. My new go to for muffins. I used lemon yogurt fresh from the local dairy instead of milk and melted the butter. Perfection! Love Preppy kitchen. All the recipes are so good and so easy!
You know how you read comments if anybody has done this recipe and how they turned out? I don't do that with his videos. I just start measuring. That's how confident I am in his recipes. Tried this and my 2 year old loved it. 😍
Just made them with peaches instead of blueberries, as I had them on hand and they turned out just perfect! This recipe is a perfection! Gonna try them with different fruits now. My 2 year old son was obsessed. He ate them with full mouth as it never really happens with a 2 year old lol. He came for a second muffin while still chewing on the first and having one piece in his hand still. He already knew he'll want to have another piece of this heavinly heaven. They really are perfect. I'm a muffin fan from Latvia, Europe. And it never really worked for me to use American recipes, cause of the measurments and different products we have. This one worked out as perfect as it can get. This cook is a perfectionist! That's for sure. I'm so thankful for this recipe.

Toss the zest with the sugar before mixing with the butter and eggs. If I know I'm going to make them a day ahead I mix it the day ahead and let it sit until I'm ready to make the muffins. Not sure that it particularly adds to the taste, but I like the way it distributes the zest. Also, I always use buttermilk and add a dallop of sour cream. OK, he just said you can add buttermilk.

I made these with a quarter cup of melted butter (2 oz) and then 2 is vegetable oil. Also added about 3/4 tablespoons to the milk for a buttermilk substitute. Turned out great! Tip: use a spatula instead of an electric mixer so as not to overmix.
This is the second time that I follow one of your recipes and oh my god, the muffins were so fluffy and nice. Your instructions, descriptions and alternative suggestions makes my baking achieved a very pleased outcome! My first time following your recipe was for cupcake and boy that was not any less nice!
So many muffin recipes. I use natural yoghurt in the 'wet' mix and when cooking blueberry muffins, I always use frozen because I reckon they don't explode so much in the bakingl Also only one egg per dozen, and all veg oil makes them softer. To each his own. I used to make 8 doz or so every day to sell at the kids' school when the rebuilding program was in full swing and there were no facilities for the kids at morning break. Did it for 3 years. Some of the profits paid for one of the proms each year. Couldn't do it now - Health & Safety would have a fit!

This recipe was awesome and these were the best blueberry muffins I ever had. I made a few small modifications. Instead of flour, i used corn meal. Instead of white sugar, i used brown sugar. Instead of blueberries, i used peaches. They turned out so great and were the best blueberry muffins i ever had. Thanks for the recipe.
Whenever I have a dental appointment, I always make treats for everyone in the office and decided to give these a try. I used the lemon juice, sour cream, milk combo, and the receptionist said they were the best muffins she has ever had. Guess the title did not lie!!
