I had a great butcher at sherwood(organic meats), they made the best bacon, until they changed the recipe due to other customer complaints because they used "nitrites".. the traditional way to make great bacon is with salt Peter, and if you dont use it, it just tastes like modern processed shit.
I never really got into lamb. I found it too annoying to cut off the bone and deal with the fat through it. Pork is the one that fills you up for ages.
