Mohsin Bhai, For us novice cooks, would you be able to write in captions, ask the chefs when the flame is high, med, or low, or capture the flame on cam when chefs change it; it helps to know this so masalas and veggies are not undercooked/soggy/boiled when replicating the recipe at home. From your videos it looks like it is med when roasting dry or whole masalas in oil, high when they are roasting raw veggies/aromatics or pastes with the added masalas, med again when they are simmering proteins/veggies for 10+ mins, and then high again after they add everything else before serving.
