In the past, i have only bought lump crab. I had access to an excellent internattional farmer's market and pricesc were better, but those days have passed, so I am looking into canned crab. Thanks for the advice.

after seeing the cost of lump and jumbo lump crab meat, I sure won't whine about the cost of claw eat in the future....not that I whine too much--it's hard to complain when CG is feeding me crab cakes

Thank you for educating me about Crab. I had always bought just the regular can of crab meat and when I opened it I was like "what the hell do I do with this can of mush" LOL.. I hope that Chef buck has his heart rate slowed down from the sticker shock of the JUMBO lump meat, that was too funny but I do have to agree with him on the price. Maybe a splurge for a special occasion.. I am looking forward to the crab cake video. Have a great day guys and of course thumbs UP! 👍

I think Claw crab meat is plenty expensive enough...there might be subtle differences in the types of refrigerated crab, but there sure aren't subtle differences in the prices

Great educational video, CG & CB! Not being a steamed crab or crab cake fan (despite living in Maryland for almost 25 years), I never paid any attention to the subject. But now I know, thanks to Camera Girl. BTW, that Bumble Bee mush looks suitable only as a mix-in for dip.

yes...the Bumble bee is definitely something to add to something else. Crab cakes, crab bisque, and crab dip are my crabby favorites. CG likes to use crab in Gumbo, but I think it gets lost in gumbo. Steamed crab never really interested me, especially the big steamed crab legs...I used to work at a resort where we served a seafood buffet every Friday and folks were savages for the crab legs...it always seemed to get kinda post-apocalyptic at that end of the buffet

@@ChefBuckRecipes Yeah, the fetish around those giant steamed crab legs has always been a mystery to me, too. I was more of a lobster fan, myself. My parents taught me how to deconstruct a whole steamed lobster when I was fairly young. I always liked vacationing in New England, and worked a "shore dinner" into my plans as often as possible. In Maryland, steamed Blue crabs are a popular obsession. When I lived on the Eastern Shore [of Chesapeake Bay] my brother used to drive down from NYC to visit me. At least that was his story. Really it was to go to a local eatery called the Old Mill. They covered the table with brown paper, gave us a basket of fried chicken, a basket of hush puppies, a plate of corn on the cob, pitchers of beer and/or iced tea, a roll of paper towels and a big trash can, plus a plastic bib, small wooden mallet, and crab pick for each diner, and dumped a huge pile of Old Bay-seasoned steamed whole blue crabs in the middle of the table. Every so often they came back to see if we needed more of anything. The food was all first-rate, so I was content to just nosh fried chicken and watch my brother demolish that mountain of crabs.

I agree with Buck! I usually use Bumblebee Lump crabmeat. Around $5 per can. Great flavor and size of lump but, delicate.

I'm definitely shooting some crab cake video this week...hopefuly I'll get something useable -- i.e. something without my shadow looming in every shot...I usually complain about not having enough light in a kitchen, but this kitchen we're in at the moment has too much light (or maybe I'm just bad with light)

I laughed so much when you said that crab was $31 and Buck got excited. I am the same way. I will put back a box of crackers because one is a dollar $.29 and another one is a dollar 34. I don't think I've ever used crabmeat before because to me it is so expensive. I really like how you showed the different crabmeat and the prices this was a great video. I also thought you made an important point about not wanting to add really strong spices to cover up the flavor of really good seafood. I think a really hot and spicy flavor should be for food that needs it. If you spend a lot of money on seafood you want to taste it. At least I do. There is a lot of work in catching crabs and cooking them and then processing them and picking out all the meat. You don't get a lot of meat out of a single crab. Also, a person could go all day long crabbing and not catch enough to fill up one of those containers. So $31 is not a lot when you consider everything that's involved. I recently found out that here in South Florida we have a new invasive fish called armored catfish. What caught my interest is several people said that the meat tastes like crab or lobster. The exterior of the fish has very large bony scales similar in composition to a crab or lobster. However, the interior of the fish only has a central backbone and no other small bones. So once you cook these fish and remove the large scales from the outside you just have a large chunk of firm white meat with the central bone like a drumstick. I want to catch some and cook them in see if they will taste like crab or lobster. There are tons of them here now. The other fish are no threat to them because of their thick shells. I hope you do more comparison videos like this one. I enjoyed it a lot. Maybe you could do one on salmon. I once accidentally got a can of sockeye salmon which is like five or six dollars a can. I wasn't paying attention. I thought it was my usual cheap pink or red salmon for two dollars a can. Let me tell you, sockeye salmon is amazing. It's a whole different fish. Hey Buck, can you and camera girl tell my Dragon NaturallySpeaking text-to-speech program is working now? If you have to answer a lot of comments on your channel you ought to get this program. It's so easy to answer or reply to comments on my channel now.

I need to up my comment game:^) That fish you're talking about sounds real interesting. I've not much of a lobster fan 'cause of the price. I make exception for crab cakes, and that's what I'll often order in a restaurant if I'm going to treat myself. The difference between pink and red canned salmon is pretty striking...I'm happy with either type of fish, although I pretty much exclusively buy the pink since it's about 1/2 the cost. If I buy expensive fresh fish like a fresh salmon filet or--God forbid--grouper...I cook it pretty simply in a skillet or broil it in the oven. There's a part of me that thinks making a sandwich with expensive ingredients isn't the best move, but a grouper sandwich is the best.

I agree...I used to buy frozen pkgs of crawfish to make patties when I lived in New Orleans because they were cheap...this was back in the 90's...we were in New Orleans a few months ago and that same crawfish sure didn't seem cheap anymore

Wish I'd heard yest before guest before I made crab cakes for a group of priests I had cooked a "nice meal" for. I had tried and eaten crab cakes in NorwY but we caught and cleaned our own I knew nothing about canned crab, but followed the recipe. I bought a few cans (didn't know about where to find the fresh lump meat here in the USA). I followed the recipe and my taste before serving was delicious. Unfortunately I did not get a big enough bite to find out it was FULL if cartalidge or shell - something awful! I have never tried it again but I think I will now but will by the crab leg fresh this time! Thank you for this helpful advice/info!

crab rangoons...when CG and I lived in Tallahassee we used to buy a bag of Crab Rangoons at a Chinese restaurant next to Publix every time we went grocery shopping and then eat them in the car on the drive home...we always burnt our mouths the first few Rangoons, but it never stopped us :^)

we generally use a mix of canned and refrigerated--although I steer clear of the lump because I don't want to jeopardize my status as "el cheapo"

I remember tying raw chicken skin to a line and drawing crabs in to net them when I was a kid, and I remember a crab grabbing hold of my pinky finger and making me howl!

I bought that mechanically separated and blended bumblebee stuff. It is honestly one of the nastiest things I have ever seen, let alone put into my mouth. I am not sensitive at all, even anti-sensitive in a lot of ways, this got a gag and a toss in the trash along with a lot of exclamations, genuinely out of character for me.

The Bumblebee canned crab meat has 600 mg of salt. Salt is the third listed ingredient after water. No wonder my crab cakes taste so salty and awful. Would like to know the salt content for the pasteurized cold crab meat.

The Publix claw crab meat has 270 g of sodium. It appears the cold pasteurized claw crab meat would be the better way to go for crab cakes. I like salty but the canned crab is just crazy salty.

I purchase a bubble bee white crab meat today in Walmart and to my suprise it was paper on top and the bottom and it tasted like paper I just threw it out Be Aware when you buy Bubble Bee

Yeaaah I tried to venture into eating crabs..but first of all I was raised somewhere with an ocean where you cook whole crabs the flavor is waaaay more pronounced and you can squeeze the crabby experience..you know..like using shelled shrimps with their heads on for a stock..a HUGE difference. The canned crab meat experience can be really bad with like mini shell remains and a very rubbery texture and mainly water. While those "fresh" in plastic containers...the price is insane...and they don't have the shell element included..so it's like eating chicken breasts meaning meat that has a very faint mild flavor...soo..I dunno I just can't get into the insane price. Maybe sell crab stock with them or something I dunno. Most of the crab cake recipes attempt to fill out the recipe with other ingredients to compensate for the price but the crab flavor ends up drowned anyways especially if you're using canned..then why did I bother at all..might as well just buy fake crab while I'm at it lol.

I grew up in Maryland and we would never use canned crab meat to make crabcakes. Usually your videos are informative, not this one. When it comes to a crabcake that usually only five ingredients. That supposedly canned crab meat looks like grits.
