Hello Darlene! 1/2 cup butter 1/2 cup heavy whipping cream 1 cup creamy peanut butter 1 tsp vanilla 1 1/2 cups powdered Swerve 1/4 cup peanut flour Line a 9x5 inch loaf pan with parchment paper. In a medium saucepan over medium heat, bring the butter and cream to a boil. Boil for 2 minutes. Remove from heat and add the peanut butter and vanilla. Transfer to a large bowl. Beat in the powdered sweetener 1/2 cup at a time. Mixture will separate and become clumpy, that’s okay. Use a rubber spatula to “paddle” the mixture together again. Sift the peanut flour over and continue to paddle until well combined. Should be consistency of dough and not liquid-y at all. Press the mixture into the pan and refrigerate for 1 hour. Remove parchment paper by edges, and cut fudge into squares.
Looks great! I too have had a hard time finding keto dessert recipes that I like. My question, I cannot find peanut flour so can it be substituted or eliminated and still get a great pan of fudge?
Hello! I have used almond flour in substitution. Just add a tiny bit to help firm up the fudge. I mix in a small amount at a time until I reach the consistency I like.
