Majkl loves Nabeyaki Udon soups. He first ate it in Vancouver in a Japanese restaurant, and since then he eats this soup very often, especially in the fall and winter seasons.
All ingredients can be found in local stores or asian supermarkets.
Ingredients for 4 servings:
400g udon noodles
For the Dashi stock, you will need:
2 litres of water
4 seaweed leaves (Kombu)
40 g smoked tuna flakes (Katsuobushi)
Ingredients to add to the soup:
4 shiitake mushrooms
1 leek (white part only)
1 carrot
3 green onions
1 handful of fresh parsley
4 tablespoons of mirin (Japanese sweet seasoning)
5 tablespoons of Japanese soya sauce
8 slices of Kamaboko (Japanese fish cake)
1 tablespoon of shichimi togarashi (Japanese spice mix)
4 eggs
12 slices of chicken meat
8 shrimps
100 g tempura powder mix
150ml of cold bubble water
To make your own Udon noodles, you will need:
300g all purpose flour
180ml warm water
5 g salt
