Keith Riles seasoning has ruined several cooks due to SALT. I do use his Garlic Butter successfully, butt the rest of his seasonings must take practice? For me and my crowd, way too much salt and not enough flavor! I have the Victory 35 and I've MOD several things and I can share these with your channel. These MODS have worked well for dialing out poorly engineered features and what works well to dial in the perfect cook! Enjoyed your review and continued success!

I have the Austin and master built 560. Love them both. I did the rec tec mod on my Austin and just seeing your video with the Austin smoking the rec tec controller makes the smoke so much cleaner. Hope you get one you will love it.
Just use charcoal pellets and don't void your warranty/risk damaging your grill. Pellets are soft enough to be broken up the the augur. Charcoal is harder.
Just wanted to put a plug in for Smoke Daddy Pellet Grills. Temperature holds steady , no swings. Have had mine for 5 yrs and no need for modifications.

The ebay sale has ended. Any idea if he will make another batch of them? Thinking a stainless Steel mini loaf pan would work. Just cut off the ends, and tune on the length a bit, as required. Just subscribed., nice work. Never thought I'd hear BBBQ'er's talking about PID controllers.
Suppose I'm a little late. But at 7:50 where you talk about your "pid controller taking a shit". The pitboss Austin XL is not equipped with a PID controller but rather a standard timer based digital display.
I have a pit boss 820 FB and my inkbird I put on the far side away from the grill probe shows a 5-10 degree difference from the grills temp prob.. And my dome thermometer is within 10-20 with the temp prob on the grill.
I have no problem my Pit Boss I've done modifications on mine and all the temperatures top grate bottom grate even temperatures door temp an controller temp within 5 degrees of each other. And I would be willing to bet that nobody has got a Pit Boss it will hold all them temperature like that and until you do that kind of mod you will not never get it. The before you all make videos out there make sure you got your ack together
Check the smokedaddy“Heavy D” Stick Burning Heat Diffuser..looks very interesting. Has compartments that allow you to add wood for extra wood smoke. I'm still trying to figure out which grill to get but I think whatever I end up with...I'm also ordering the Heavy D.
