Mandy Patinkin (Inigo Montoya) can rock a full mustache so the mustache in Princess Bride is a costume choice, probably the directors, so I don't know that he should be faulted for that. I'm curious what you think about Robert Redfords 'stache in Butch Cassidy and The Sundance Kid. (William Goldman wrote the screenplays for both movies.) You also forgot Kurt Russel from The Thing and Kurt Russell from The Hateful Eight. Ian McShane in Deadwood. Sean Connery, Richard Harris, Robert Shaw, and Alan Bates are some others who could truly dignify an actual hairy caterpillar.
