Willy's Quick & Easy Cast Iron Pan Buttermilk Biscuits
Ingredients
• 2 cups all-purpose “unbleached” all purpose or bread flour
• 2½ teaspoons baking powder
• ¼ teaspoons baking soda
• 1 teaspoon salt
• ¼ cup lard or vegetable Shortening (chilled in the freezer for 15 minutes)
• 2 tablespoons of real butter (chilled & diced into 1/4” cubes)
• ¾ to 1 cup buttermilk (well shaken / stirred)
Directions:
• Pre-Heat the oven to 450°F and arrange the rack in middle of the oven
• Mix the dry ingredients together
• Add the diced butter & lard to the dry ingredients - blend in thoroughly with your fingers to combine everything - breaking up chucks to smaller pieces
• Mix in the buttermilk & blend well with a fork
• Drop the dough onto a well-floured board - dust it & flatten with your palms, folding the dough over at least 5 times (this layers the biscuits & makes them flaky) - flatten out the dough to about 3/4 inch thick - cut with biscuit cutter (but don’t twist the cutter as it will seal the ends of the biscuits)
• This batch should yield about 7 to 8 biscuits using a 3” biscuit cutter
• Arrange biscuits in a # 8 cast iron skillet (no need to grease) - if using a cookie sheet or other type pan you will need to grease it (But these are best if made in cast iron...)
• Bake until the biscuits are golden-brown, 15 to 18 minutes. I turn the pan 1/2 way thru baking to insure all of the biscuits brown evenly (I don’t have a convection oven)
•Slather with butter & or jelly and enjoy

Tips....
• No buttermilk at home - add 3 tablespoons of fresh lemon juice or white vinegar or apple cider vinegar to a cup of whole milk - mix well and let it set for at least 15 minutes - mix one more time before using it....
• Know your Flour - I always use unbleached all-purpose flour in all of my recipes - Search the internet for bleached flour & read how it’s processed - it’s treated with chemicals which strip the wholesomeness out of the flour & leaves trace chemicals behind - I will never use bleached flour again...
