BEST VEGAN MOZZARELLA - GLUTEN FREE! IN NO TIME!

HERE IT IS! My self-made vegan mozzarella! Hand made. Easy. All vegan. Glutenfree. You will make it in no time and you won't stop making it - believe me! I tried many different recipe but this is my all time favorite one. You can serve it as the "classy Italian" caprese salad, put it on pizza or a sandwich, chop it for pasta or wherever you need it ;)
All you need is:
150g Cashews
3 Tablespoon Psyllium Husk
Lemon Juice
2 Teaspoon Mustard
200ml (1 cup) of Water
Pinch of Salt & Pepper
THATS IT! REALLY!

Here's a quick little tip to help save the planet just a little bit more from the plastic and also save you time. Take an ice cream scooper, scoop the gooey mozzarella into ice water. instantly shapes it, instantly cools it to keep it's shape and then you can put it in a salt water brine in a jar. This will preserve it just like the way you used to buy the buffalo mozzarella at the store. Better for the environment, and also MUCH faster for you. The scooper will ensure that you have the same amount of mozzarella in each ball and they will all be the same size. :-)

1:17 Put some water in the cashews, make sure every single cashew is covered with water, every single one is soaked up with water AND make sure everything is touched by the water.

@@NinoSamparisi Ho fatto la tua vegan mozzarella ed è venuta da dio!!! L'ho messa sulla pizza e sulle piadine ... buona, gustosa e l'aspetto è identico alla mozzarella vaccina ... ma qui non abbiamo sfruttato nessuna mucca né privato del latte a nessun vitellino!!! GoVegan! Inoltre è velocissima e molto light in quanto ha solo i grassi degli anacardi e questo la rende SUPER!!! Mi sento di dare un consiglio a chi vorrà farla: frullate bene prima tutti gli anacardi, insieme al limone, la senape, il sale ed il pepe, e tenete per ultime le cuticole perché se non si ha un frullatore potente, le cuticole di psillio così ben appiccicose, non lasciano lavorare bene le lame e si rischia di non ottenere un'impasto liscio senza residui non tritati. La prossima che farò aggiungerò un po' di aglio in polvere per un gusto un poco più STRONG! Nino sei un grandeeeee!!! Buona vita e... a presto! EN I made your vegan mozzarella and it came from god !!! I put it on pizza and wraps ... good, tasty and the look is identical to cow's milk mozzarella ... but here we have not used any cow or deprived of milk from any calf !!! GoVegan! It is also very fast and very light as it only has the fat of cashews and this makes it SUPER !!! I would like to give some advice to those who want to make it: first blend all the cashews well, together with the lemon, mustard, salt and pepper, and keep the cuticles last because if you do not have a powerful blender, the psyllium cuticles so sticky, they do not let the blades work well and you risk not obtaining a smooth dough without uncut residues. Next time I'll add some garlic powder for a bit more STRONG taste! Nino you are a grandeeeee !!! Good life and ... see you soon! 🥰

New subscriber here. It's a bummer that I am unable to fix this at this time. I have my cashews and Psyllium husk packed away for moving. I plan on trying it out once I am moved and settled in an have found everything. Does this vegan cheese melt? Like for putting on pizza? I make my own dough and need to push my toppings into the dough to keep them from falling off because I haven't found a vegan cheese that melts and helps to hold them on. I like the fact that there are no oils in this like the shreds and slices from the store. The oils in those set heavy in my chest. The only fat in this is from the cashews still attached to the fiber. Thank you for sharing this recipe. It looks so simple and should be easy to do.

Terrific recipe, so quick and easy to make. Unfortunately it is very difficult to find psyllium husks in my area. Wondering if I can replace them with Chia seeds, flaxseed meal, or tapioca flour. Thanks

Hey Paolo! Thank you for your comment. If you do not have a chance to get the psyllium husk look for grounded flax seeds or chia seeds but I would definitely try out first with the flax seeds since they are very similar to the p. husk. Let me know! All the best!

Pysillium is also included in medicament anti gastro desease because it absorbs water. If you're sportsman I recommend you to use nutritial yease with Agar or Corn starch.

Pysillium husk has actually a pretty good alkaline status. Great for any digestion issue the body can have. You just have to try it out :)

Hey Layaly 😋 thanks for your question. I think you can definitely freeze it. Just try it out with one mozzarella. Mustard adds to the cheesy taste 😚 not necessary but will definitely lose in taste since mustard adds the whole mozzarella a strong component as a taste 🙏🏽

Thank you! Yes it is... not super "melty" but it does. Make sure to let it melt slowly in the oven though :)

... Nick… First time I'm seeing you… a little echo in your kitchen everything looks fine… How about a food processor for the mixing?… Or a high-powered stick blender?… Does the cheese melt ❓ good luck...😎

Thank you Tony :) yeah the echo is kinda hart to get rid of but Ill try to improve everything over time :) YES! Both work as well - I just use a blender most of the time :) and yes the cheese can melt but make sure not to burn it. Make sure to let it melt in a medium heat environment. Do not turn the heat all the way up otherwise you will not only burn the cheese but also everything else - Thank you again and can't wait to hear from you back soon!

Thank you for your comment Gorgette :) To be honest I havent tried without cashews before since its more or less the main ingredient for this kind of "mozzarella". :) if you ever try it differently and even without any kind of nuts let me know :) happy holidays!

Hey Cait :) yes it does but be careful if you top it on a pizza. Slice it thin or minced it otherwise will the “pizza bread / crust” burn faster than the cheese - let me know! :)

Just raw ones :) but I believe roasted can definitely work out too. Maybe it gives the cheese a smokey taste to it 🙌🏽 try it out and let me know Chris!

Hey Havad! Thanks for your comment. To be honest I am also getting confused with the "cup measurement" since I had many cups that included "measure-lines" and all of them were totally different. So if you have the chance to measure 200ml (which is the perfect amount) then do that :)

You should rather make it in a food processor. It's much easier to blend & get out. ;)

200 ml is not 1/3 of a cup, it is almost a cup. In Ounces, it is almost 7 ounces.

Hey Liane! Thanks for your response. Well back then according to google it was apparently 1/3... I'm always using the metric system instead of the imperial. I might should stay to the metric even though I want to make it possible for everyone :) appreciate your feedback tho! All the best!

Indeed! Pretty much everything can cause an allergic reaction to the body. Nevertheless, psyllium husk: which are a combination of insoluble and soluble fibre and are the very best cleansing fibre supplement I have ever come across. It helped a lot of my clients (during my coaching) with their digestion issues. :)

200 ml is one third of a cup? What fking cups do you have?! 🤨 600 ml? Normally a cup is 236.6 ml!

Sorry for the confusing. I had one measure cup that said 1/3 = 200ml. But as I googled it after your comment I can definitely agree with you and I am sorry for the confusion. Nevertheless, stick with 200ml and you will be safe :) let me know if you have any further questions. Have a great day!
