I love baking but my mom never gets to eat what I make bc she doesn’t eat eggs. I felt bad so I made her these as cupcakes and BITCH! These were the best cupcakes I’ve ever eaten!!! I ate 5 and I feel like I’m gonna die but it was so worth it. My mom absolutely loved the cupcakes, she was so happy. And she’s a very picky eater so that’s saying something! Definitely making these again!

I made this for my daughters first Birthday. It was actually the best vegan cake I have ever eaten. I payed $75 for a vegan cake that was not great. This was amazing. I put a little more lemon and it tasted like lemon cake. Delicious.

I have made this cake several times, either as cake or cupcake or base for your tiramisu. This measurement works perfectly for us. All ingredients are easily found in most kitchens; no special cake flour needed and no special equipment needed to mix. This has become our go to recipe for basic vanilla cake. Thank you!

Linda Cunningham the cake was heavy and dense and greasy.but I didn't over mix and outside edges of cake were chewy..the birds loved it but I don't think they could fly afterwards lol

Can I just say having now made your recipe, that this cake is right up there with Isa Chandra's vanilla cake and hers has been my go to recipe since I've been vegan, about five years. I just had to let you know that this cake is delicious, moist, and has a texture like a cake made with eggs and milk. I am so impressed, so thank you! I thought eating as a vegan I would never be able to find a cake that had the texture I was used to before going plant based-this is it!!!!! I did change one thing, and it was using white distilled vinegar instead of the lemon juice or apple cider vinegar because that is what I had on hand. Once again thank you soooooooo much!

I baked this for my birthday!! It was so good! My brother, who is very critical of my baking, went in for seconds! I made a few changes though... Only because my fam is asian and western cakes are too sweet for them... I only added 1 cup of sugar and instead of 1 1/2 cup of milk I added 1 cup milk and 1/2 cup whipped aquafaba. And for the Icing I used a flour paste/butter cream recipe

MADE IT AND IT WAS AMAZING!!! i baked it for my little nefew birthday and everyone demolished it!! I love your energy so much! :)) this was my first time baking as a vegan, and the cupcakes turned out great! I was i afraid that i overmixed, but they look okay (thankfully). I took them out three minutes early after tooth pick checking though, just myown experience. They’re so light, fluffy, and moist! I definitely recommend this recipe. Hi Sam! We had a birthday celebration on my job and prior to the celebration I tried to find a bakery which made vegan cakes, without success. I saw your recipe and decided to give it a try. I made the cake, frosted it, and topped it with strawberries, raspberries, and blueberries. I took it to work and my co-workers DEMOLISHED IT!!! Oh man am I happy I found your recipe. I've been looking for a vegan caramel cake and was unhappy with everything I'd tried. In the end I decided to just create my own from a vanilla cake base. I took this recipe and swapped the sugar out for 1/2 cup of date syrup and 1 cup brown sugar, and I used 'so goods' date and almond milk for the non dairy milk, And it made the perfect caramel cake.

Yanett Sainz I'm in New Zealand so we don't have a lot of the same brands as other countries. The brand I used was called "So Good" and it was the almond and date caramel drink. It came in a 600ml bottle from memory.

OMG! I made this cake today for a customer as my first vegan cake order and it came out delicious!! Sooo easy too! Thank you!! May I ask what vegan butter you use? I used Country Crock plant butter but the frosting had a slight salty aftertaste.

I always use light olive oil in my cake recipes. There is no residual olive oil taste, and it works wonderfully. I also never use Crisco because it is a trans fat. There are non-hydrogenated shortenings available which makes them zero trans fat, such as Spectrum Naturals Organic Vegetable Shortening, and that is always what I use. If being vegan means helping you be healthy, then these substitutes are the healthiest ones, and they work. Although I entered this as a reply to one of the questions here, I thought it was important enough to add as a comment.

Love this! Found your confetti recipe online , which subsequently led me to this vid! However I have a question, if I’d like to make a confetti version of this cake , would it just mean adding the sprinkles to the batter?
