I would add onions to this and call it one of the best suppers I ever had! I have done eggplant and potatoes before when I was vegan and I want to make it soon for my African friend and myself. :-). Thank you for sharing!
I actually love how these things are presented without the need for verbal narration. Little things like showing us that you don't just tip the eggplant out of the bowl into the pan because you don't want the excess water are a very nice touch.
Dear Madam, First of all thanks for this sharing it. Yes this is a traditionally made dry curry in India and quite popular too. Your method is to make it crispy that adds more to texture. I have pressed 'Like" button for that. But please allow me to add one thing: Egg plant (also called Brinjal) is cooked peeled like you did and also without peeling. Actually without peeling it has far more Iron and mineral content and good for health than after peeling. So it's better NOT TO PEEL OFF THE Violet skin. Instead of Dill leaves (not available in summers in India), Coriander leaves (easily available) finely chopped, can also be sprinkled over the dish and that gives a very nice flavour too which is a bit milder than Dill leaves. Both have their own unique taste.

А я вообще отваривают картофель, а в это время обжаривают баклажаны и кабачки. Все готово одновременно. Остаётся слить воду из картошки, разложить по тарелочкам, а сверху выложить обжарку. Согласитесь, что жирность блюда падает, а вкус то же!

Different meal I’m going to try it, I eat meat,fish,chicken,beef,veal but trying to eat without it once in awhile and with a good vegan recipe it’s good for me 🙏👍😁
