I used wheat flour (gehu ka ata ) instead of maida it came out really well so u can also try it with wheat 🌾 flourr healthy alternative to maida .

A good substitute for maida : take wheat flour and grind in blender for 3/4 minutes time depending on think ness and quantity of wheat flour . I tried this method for puran poli with success . Also , in all recipes with potato s , half or 2/3 rd portion I substitute with lauki / doodhi . Retains potato taste , healthier .

Let me correct it's traditional marathi and gujarati snack. Which pronounce as bhakarvadi भाकरवडी in gujrati and bakarvadi बाकरवडी in marathi. So please clear this difference.

How does it make any difference whether you call it in Marathi (baka..)or Gujarati (bha...) .it will taste the same. Instead of nit picking , appreciate the efforts taken by the chef to prepare it.

No problem, prepare without coconut. Balance the proportion by adjusting the other co-ingredients ; i.e., khas-khas and sesame seeds. This may call for a trial and error method, but finally you will get one correct combination which will suite your likeness.

Doesn’t it get wet with tamarind chutney? Then how can you fry with wet chutney in hot oil?

The powder mixture soaks some water from the tamarind pulp, and while frying, most of the excess water turns into steam and makes its way into the atmosphere. Some steam gets trapped inside and after the bhaakarwadi/baakarwadi attains ambient temperature, it condenses and imparts some softness. Smaller wadis will have less moisture, therefore they will last more.
