Umu is umu.. tama sii likes there own way of cooking umu, tama samoa likes there own way of cooking umu.. dont get confuse and try to hate each other.. maybe tama samoa havent try tama sii style even the tama sii havent try the tama samoan style.. i made umu since i was little following my father and my older brothers its thru the blood.. so if was a tama sii or tama samoa it would be still the same... so just go and make a umu yourself and invite your friends and family over to enjoy it.. and dont forget me.. lol

I've never seen a umu with massive amount of food cooked in it. Even our umu back in Samoa don't cook as much food like that. Love the Tongan way of cooking in a umu..creative and can accommodate for large number of people. Now, it makes me hungry on this Sunday and there's only frozen chicken in the fridge (Auckland, NZ)...oi aue...lol.

If anyone has seen Samoan umu the food is actually in direct contact with the hot stones only fish is cooked just two layers of banana leaves above and of course the duration of the umu is 30 minutes for a large one or just 25 minutes if the chief cook thinks the oven or umu is really hot. however i am amazed that the toko's food still got cooked even though there oven took on alot of water in the beginning .... malo le gasese, malo le tautua.

@malmotumotu5218

The Samoan umu is base on the direct heat from the rocks hence why you guys put rocks on the top. The Tongan umu is largely base on convection where it relies more on the circulation of the heat from the rock circulating around the food.If you notice the Tongan always try to have a bit of a gap between each layers and a gap between the last layer of food before closing.That’s to allow the hot steam to circulate to ever part of the food! Malo ofa atu

@johnkeydonkey8519
@johnkeydonkey8519 4 года назад
Yeah, it is funny lol. I guess it's because our ancestors didn't cultivate herbs and spices like other cultures did. If we wanted to give food seasoning, we would just use sea water😂. Our ancestors were always voyaging the vast Pacific, so I guess they didn't have time to pack in all the herbs and spices. This has probably led to us appreciating the natural taste of the foods we eat. I don't know, just a suggestion as to why us polys don't season our food much. 🙂

That's one massive ass umu. I didn't think the food was going to cook. But it did. I've never seen an umu done in this magnitude before. I think Tongan is under ground like hangi??? Correct me if I'm wrong. Samoans are above ground, with heaps of insulation on top to trap heat and cook food. I think that's the difference? Then I can I understand why you chose the Samoan method. You would need a big ass pit to put all that food in lol work smart is what I always tell my boss hehehe Malo tokoua, malie tonga. Malo aupito.

Paula there are things that slightly differs in the two 'umu,Tongan 'umu is base on steam to cook the rest only the bottom part that are expose to the radian heat of the rocks but Tongan tend to put more layers of leaves or kape(Kamu)on the bottom to protect it from being overly burn,the next layers of food is lifted allowing the steam to cook it.The Samoan way is to put extra hot rock in between layers and also from the top.The Samoan 'umu then to be a bit crispy where as the Tongan one then to be a bit softer.Either way each like their own food in there own way,hence that why the Samoan like their Taro to be a bit dryer and the Tongan likes it softer.Wonderful!
