In today’s recipe, we’ll show you how to create a delicious and wholesome spread of dal tadka, rice, #aloochokha (mashed spiced potatoes), and crispy lauki pakora (#bottlegourd fritters). Each dish brings its own burst of flavor, from the comforting warmth of #daltadka to the crispiness of#pakoda and the rustic simplicity of #aloobharta . 📜 Ingredients:
For Dal Tadka:
Tur dal - 1 cup
Water - 2 cups
Tomato - 2
Salt - to taste
Turmeric Powder - 1 tbsp
Ghee - 1 tbsp
Cumin seeds - 1 tbsp
Hing - 1 pinch
Red Chili Powder - ½ tbsp
Fresh Coriander Leaves - finely chopped, to garnish
For Aloo Choka / Aloo Bharta:
Potatoes - 4-5
Water - 2 cups
Salt - to taste
Mustard Oil - 2 tbsp
Cumin Seeds - 1 tbsp
Hing - 1 pinch
Onion - 1, finely chopped
Fresh Coriander Leaves - finely chopped
Green chilies - 2, finely chopped
For Lauki Pakora / Bottle Gourd Fritters:
Garlic - 4-5 cloves
Ginger - 1 inch
Fresh Coriander Leaves
Green Chilies - 2
Salt - 1 tbsp
Black Pepper - ½ tbsp
Dried Mango Powder / Amchur - ½ tbsp
Besan - 1 cup
Salt - to taste
Ajwain - ½ tbsp
Turmeric Powder - ½ tbsp
Red Chili powder - ½ tbsp
Coriander Powder - 1 tbsp
Mustard Oil - to fry
For Rice:
Ghee - 1 tbsp
Salt - tbsp
Rice - 2 cups
Water - 5 cups
🌟 Instructions:
Prepare Dal Tadka:
1) Soak tur dal in a large vessel for about 30 minutes.
2) Place the pressure cooker over a high flame.
3) Add water, soaked tur dal, half chopped tomatoes, salt, and 1/2 tbsp turmeric powder.
4) Close the lid with pressure on and cook it till 3 whistles over medium flame.
5) Once cooked, let it cool down.
6) Put a kadhai over medium flame.
7) Add ghee, cumin seeds and hing. Let it splutter.
8) Add boiled tomatoes into the vessel with salt, 1/2 tbsp turmeric powder, and red chili powder. Cook them for 5 minutes.
9) Pour boiled dal in it and stir it properly till it comes to a boil.
10) Garnish it with finely chopped fresh coriander leaves.
Prepare #aloochokha / Aloo Bharta:
1) Put potatoes in the pressure cooker and pour water in it.
2) Close the lid with pressure on and cook it till 2 whistles over medium flame.
3) Till it cools down, finely chop onion, fresh coriander leaves, and green chilies.
4) Peel the boiled potatoes and coarsely mash them.
5) Take a tadka pan and pour mustard oil in it.
6) Once hot, add cumin seeds and hing. Let it splutter.
7) Add it to the mashed potatoes / aloo chokha.
8) Add salt, chopped onions, green chilies, and fresh coriander leaves.
9) Combine them properly and keep it aside.
Prepare #laukipakoda / Bottle Gourd Fritters:
1) Cut bottle gourd / lauki into thin slices.
2) Grind garlic, ginger, green chilies, fresh coriander leaves, salt, dried mango powder, and black pepper into a coarse paste.
3) Take besan in a large vessel.
4) Add salt, green paste, ajwain, turmeric powder, coriander powder, and red chili powder.
5) Pour water and combine properly to make it a smooth batter.
6) Do not add too much water because bottle gourd / lauki also releases when mixed with batter.
7) Add sliced lauki in it and coat each slice properly.
8) Put kadhai over a high flame and pour mustard oil on it.
9) Once hot, slowly slide a coated slice of lauki into the hot oil one-by-one.
10) Flip them over and cook on both sides till it turns golden brown.
11) Carefully take them out from the oil and place it over tissue paper to remove extra oil.
Prepare Rice:
1) Soak rice in water for half an hour.
2) In a large vessel, pour water, add salt and ghee.
3) Put it over a high flame and let it come to a boil.
4) Now add soaked rice in it and cook till it softens.
5) Drain the water from rice through a strainer.
6) Now your rice is ready.
