I'm really glad that you've actually made so many Riders Republic videos. I'm really glad and excited that you've stuck with it a bit more because most youtubers just got sponsored videos, said they loved the game and then never played it again. Even if you don't keep playing it very long after release(although I hope you will) I'm glad you posted about the game as much as you have. Keep up the good work :)
So to answer the question, you could ride a road bike off-road, it's not recommended or practical and probably very unsafe, but you could do it. What you would actually be riding in the game and is fun and safe (when used responsibly) is a gravel or cyclocross bike, essentially a road bike frame/geometry with wider knobbier tires (compared to a road bike tire) to grip the gravel or dirt. Gravel biking is actually a lot of fun and a great way to mix up your biking routine. I'd recommend checking out the UCI Cyclocross races, they're pretty intense.
Good question on racing road bikes on dirt tracks like that. Not sure about racing but I did look it up and it appears you can ride on both dirt and gravel if your riding skills allow for it. There are some caveats to doing so. You got to pick a good line and sit your butt back farther in the seat to put more weight on your back tire for better traction for example. I would assume you would need a high level of skill and knowledge for racing. Not an expert though and I only looked up some stuff out of curiosity.

OK a little bit of FYI from a cyclists point of view. They do have road bikes for the off road they are called cyclocross bikes I use to race them. They are a specific form of drop-bar bike that is built to take on tuffer terrain. Today’s cyclocross bikes have moved a long way from their origins as lightly modified road bicycles and now they are a dedicated model in the line-up of most large bicycle manufacturers. Built to race on courses that traverse muddy fields, grass or sometimes sand, the bikes feature many differences from regular road bikes. But a slight different on frame they are higher for ground clearance.
I wish we could be able to do tricks while paragliding and using the wing suits…. I absolutely love the game, it’s that sort of game when you just wanna relax at the end of the day after playing some intense games lol
