ingredients:
3 cups glutinous rice
2 cups water(more if needed)
3 cups coconut cream
2 cups brown sugar
Leche flan:
8 whole eggs(medium)
410ml evaporated milk
300ml condensed milk
toppings:
1/3 cup desiccated coconut
Procedure:
1) Biko: wash glutinous rice with water 2x
2) Add water and cook for 20 min.
3) In a pan combine coconut cream and brown sugar
4) Mix well and bring to a boil
5) Turn heat to low and cook until thickened
6) Add cooked rice and mix until it absorbs the liquid
7) Continue mixing and cook until it becomes greasy and sticky
8) Divide mixture into 4 equal parts
9) Set aside and cool completely
10)Leche flan: Combine eggs, evaporated milk and condensed milk
11)Strain leche flan mixture 3x-4x
12)Bring water to a boil
13)Divide leche flan mixture into 4 equal parts
14)Steam for 15min. over med. low heat
15)Remove from steamer and cool completely
16)Optional: pan toast desiccated coconut over med. low heat
17)Add toppings
