The BIOFAIR project (www.biofair.uliege.be) studies how climate change will impact European winter wheat cropping systems, from soil organisms to plant nutrient uptake, to the nutritious and technological quality of the harvested grains.
The aim is to identify farming practices that improve the resilience of agroecosystems to climate change and reduce negative impacts of plant production on the environment, without compromising the quality of the harvested grains.
A particular focus is on B vitamins, all of which naturally occur in wheat, and on micronutrients like iron and zinc.
To ensure the wheat of the future is still suitable for bread baking, an expert panel evaluated the gastronomic quality of breads made from grains produced under present and future climatic conditions…
