I googled "is there starch in coconut flour" (Coconut flour is starch-free, and because it's high in fiber, it absorbs more liquid than other flours.) There are other sources of starch, such as eg Taro Root, which should work.
i imagine you can if you use just the right portion of Glycerin, in the video she made it sound as if it becomes brittle. would be okay with thicker shapes maybe
