Black bean sauce dishes are among the most popular Chinese dishes there are. But I'm still surprised with the amount of people who don't know what 'black beans' are! Well I made this video to show you what they are, how and where to find them, and most importantly how to turn them into delicious dishes 😊
@@ChowWithLau a bit of both depending how much time I have..... Other week I did battered Chinese chips.. The batter for the chicken balls ...staff loved them👍👍 think try with the black bean sauce next time...thanks for the inspiration👍👍 I have done the chips with the Korean spicy sauce👍👍 a big hit

I'd describe the smell of black beans as like a chocolatey marmite. I've just received some black beans from the online Asian store and I've mistakenly got the hard black soy beans, not the salted fermented ones. Bugger. Do I have to ferment them myself? I might just stir fry my beef with some chocolate and marmite.

Hi Angie, I think you’re mistaking them for actual black beans. These are fermented black soybeans and you don’t rinse them or soak them. Don’t worry, a lot of people get the two confused 😊
@@ChowWithLau Hi, noooo I meant exactly black fermented soybeans....the exact product you're using ... someone said they need a soak in hot water as they may have grime and dirt on them....
Hi @@Crissy17-07 no I’ve never seen or done that and I’ve used it all my life. Perhaps the person you saw got it mixed up first 😅 On a more serious note I think if you did rinse or soak them they’d start to fall apart and you’d definitely wash away some of the flavour. Hope that helps 😊
@@ChowWithLau Thank you for replying , it makes sense yes 😅 and is it normal for the fermented black beans to taste a little bitter when it's stirfried with ginger and garlic ?
@@Crissy17-07 You’re welcome! No they shouldn’t taste bitter. Make sure that when you’re frying them with the garlic and ginger to make sure that you do it very gently. The goal is to slowly and gently release the flavours. The garlic especially burns very easily and can cause a bitter taste. When you add more ingredients you can increase the heat as it gets spread out more evenly 😊
I once had a dish of fried whole fish covered in black bean sauce cooked with a whole bunch of chopped scallions. It was to die for! Thanks for reminding. 🌶🧄🫑
