My grandma would put up next year's fruit when she took out this year's to make the cake. And BTW December is way too late to be baking your cake. It needs time to age with regular administrations of a drissle of the same rum you made the cake with. Making the burnt sugar ( blackening) l is a long messy business but it's better than commercial stuff.

lol ya sound like Trini/Grannies - In Trinidad we add some bitters too - we also cut up the fruit in small pieces - burn our brown sugar to blacken the cake - no stout - man, next time melt the butter then add ya alco (lol) - I like your recipe

Hey Nomme, The measurements can be found in our Flavors of Belize cookbook. We put up some recipes, but not all. It's best to get a copy of the book and use these videos as a guide. :)

While your technique is flared, mista kuylen, we belizean don't know nothing bout "sabayon" sauce, especially with black fruit cake....mind you, mi mouth waata - what with all dem nice ingredients, lol. Thanks tho, was looking for ways to avoid having the fruit settle at the bottom of the cake. Feedback would be appreciated, if you could find time away from your busy schedule.

You can flour the fruits to prevent them from falling to the bottom..

@@nericipastor624 thank you for responding. i've tried that and it didn't work. i've sprinkled them with baking powder and it didn't work either. So I'm looking for other proven methods that may help them not sink.

The batter should b thick, the fruits floured (every cup of flour with 1 tsp of baking powder) I've never had it sink
