Hello, I'm going to share the way i make Black Forest Cake.
The cake i'm going to make is called Chocolate Genoise.
You can use the chocolate cake mix in a box as a substitute if you feel lazy :P
I do have the measurements converted into cups & teaspoons at www.tanishacooks.com/2010/11/2...

it still ok if i will not used the whipping cream and ill go with the icing (cream of tartar and sugar) or can you please give me some advice? please notice my comment thank you so much

can you use anything i luv the cake i know all forest cakes have cherries but i am not a fan of cherries so can u use anythin else?

tanisha just asking.how many percent of fat in the whip cream that you are using.i often have a problem regarding right whipping consistency.most of available here in saudi canned cream consist 21% fat only.

She's using self rising cake flour but it is best to use regular cake flour without the leavening. Then just measure in the leavenings because you can control the ingredients.

Hey tanisha, Liked your cakes but can you please tell me what is alternative for cake flour? I mean what quantity of plain or self raining flour with salt and baking powder should I use to get a right balance? :-)

what is the function of putting bowl that contains egg and sugar in boiling water miss, it is something new for me to see that method? clearly explained about making blackforest.thanks for uploading

@Despereaux2407 i just bought a big chocolate bar from grocery store. I've seen some at K-mart once when i was down at Seattle. Or just get a solid chocolate bar..like Dairy Milk or Lindt

@Coolshanny spread the batter from the center to the sides. This should help create a smooth top instead of a dome

@123hijab123 whip cream i use normally comes in a milk-carton, it s 30% MF (milk fat) cream i buy from the milk section in my grocery store

The double boiler part is actually quite important. Warm eggs are important if you want your genoise to have a good volume :)

@phatas92 well the pan i was using was bigger than the original recipe called for. My batter might have deflated a little bit because i had to do retakes :)

How much did you put cream with the sugar ??? 1cup of sugar and how much cup of whip cream?? reply as soon as possible!! :) Thanks

@pkarmacharya2002 you can use plain all-purpose flour. For substitution: Take one cup flour and add 1/8 cup of cornstarch. Sift it really well together and it should do the job :D

the water doesn't need to be boiling at all. just take a pot or pan, pour in some water, put the mixing bowl in the water, turn on the heat, and stir till the mixture reaches around 38~42 degree celsius (warm and all the sugar is dissolved). that would be easier and safer.

How long did you whisk to make the whipped cream?

wondertt use heavy cream / whipping cream at the store. Use whisk attachment, I use slow-med speed at first (so it won't splash everywhere), then turn to med-high when it looks thicker. When you get soft peak, add half of the sifted sugar of your recipe, whisk at med-high again about about 5 sec, then add the rest and whisk again. You will see the cream get thicker and thicker. When you pick up the whisk attachment and you see the firm peak and able to pipe shapes out, then it is ready. It is not that hard but takes once or twice to get it right. If you over-whisk, you will start to see air bubbles in the cream and thats not appealing

Cream of tartar is only good for egg whites. You can freeze the bowl and then whip the cream in it

I have never tried using cream of tartar in my whipped cream. I heard you can use Pastry Pride if you can the cream tastes like the one from bakery, which is thicker and richer than whipped cream made with heavy cream

yeah the one i used labeled 'cake flour' had writing underneath saying 'baking powder & salt'. Its a bit odd..

Looks like a good recipe. Thanks. I use cherry pie filling in middle layer. The sweet and tart gooeyness is my favorite part of this cake. The video was well explained but would be even better if tapping cake pan after putting flour to coat it was actually demonstrated. Perhaps a cutting board on the counter would have helped. Also using a wax paper funnel, or even a spoon to fill the sifting mug would have been neater. Also a spatula would have been better to get butter out of bowl.

She mentioned: 105g of cake flour which is a special flour which has baking powder and salt in it. I reckon she was using self raising flour.
