Black Olive Pâté

Black olives 150 gm
Green garlic 3 stems
Fresh bread crumbs 1 slice + to make tartine bases
Cream cheese 25 gm
Hung curd 25 gm
Lemon rind and juice 1 lemon
Salt 1 tsp
Black pepper crushed 1/2 tsp
Butter 15 gm + to apply on bread tartines
Mayonnaise 20 gm
Lettuce leaves
Garnish: ​Parsley sprigs​, Cherry Tomato quarters & few ​Pink ​Peppercorns
1. Chop black olives and combine all ingredients for the ​Pâté.
2. Chill the spread for 30 minutes to firm it up in texture.
3. Cut bread slices with a cookie cutter. Apply butter & pan toast brown and
crunchy.
4. Place a dot of mayonnaise on each toasted slice. Place a small bit of lettuce on the bread.
5. Top with olive ​pâté. Garnish with ​a snip of parsley​, quartered cherry tomatoes & pink peppercorns.
