Here in the Pacific Northwest, blackberries grow on the sides of the road and can be a nuisance. I enjoy the flavor and I’m always trying to find ways to preserve them beyond freezing. A shrub is a sweetened, vinegar based drink that is really good to turn into a soda or cocktail. You want to allow about a week for the shrub to cure in the fridge, but it will last for quite a long time after it is finished. Here I use blackberries, but you can try it with all different fruits.
Blackberry Shrub
Makes about 1½ cups
2 cups blackberries
¾ cup sugar, granulated
¾ cup vinegar, red wine
1. Place blackberries in a medium bowl and mix with sugar. Allow to macerate overnight in the fridge.
2. On the second day, add the vinegar, stir and put back in the fridge.
3. On the third day, strain the mixture, pressing on the solids to squeeze all the sugary juice out.
4. Store in fridge for a week before using.
Serving ideas:
1. Fill a glass with ice, fill most of the way with sparkling water and top off with the shrub. Stir gently. Add mint for garnish if desired.
2. Fill a cocktail shaker with ice. Add 2 oz. of gin, ½ oz. of lemon juice and ¾ oz of shrub. Shake well and pour into a glass. Garnish with a lemon twist or wheel.

Measuring spoons and cups
Mixing bowls
Strainer
Glass jar for storage
