Blueberry Cobbler - Traditional Newfoundland - Bonita's Kitchen

Welcome to Bonita's Kitchen! Today we will be making Blueberry Cobbler, made with freshly picked blueberries and so much more.

Ingredients:
Prep time: 20 minutes/ Baking time 40 minutes/ Pre-heat oven 350°F
Blueberry Filling:
3 to 3½ Cups, blueberries ( fresh or frozen)
1 Cup, white sugar
1 tsp, lemon juice
Pinch lemon zest
1 Tbsp, flour
In small bowl toss together blueberries, sugar, lemon juice and zest, flour.
Then spread all your blueberry mixture in a pre-greased 8 inch square pan or 9 inch round pie pan.
If you are using frozen berries let thaw and remove the liquid before adding the dry ingredients.
Cobbler Batter:
2 Cups, flour
1 Cup, butter or margarine or less
½ Cup, white sugar
2 large, eggs
2 tsp, baking powder
1 tsp, vanilla
Pinch sea salt
½ Cup, evaporated milk, heavy cream, or 2 % milk
In a medium bowl cream together butter, sugar and vanilla, egg, cream, continue mixing everything together.
Sift in flour, baking powder, and salt into mixture continue mixing until all combined.
Then spread all your batter smoothing over the blueberries or in scoops.
Place in a pre-heated 350°F oven for 40 to 45 minutes depending on your oven or until golden brown.
When baked remove from oven cover with a place of foil wrap let set for about 15 to 20 minutes then serve with whipped cream or ice cream.
BAKING TIPS:
If you are using frozen blueberries let thaw and remove some of the liquid, or let rest after you bake it to thicken the blueberry juice.
When making batter use room temperature butter or part melted for easy mixing.
Use a cookie sheet under pan when baking so the blueberries don’t spell in oven.
Crack eggs in small bowl and beat before adding to mixture.

It is so good but you can put less butter if you wish. I love this cobbler and if you don't have blueberries use another berry or fruit. :) Enjoy Bonita

Once again Bonita you came to my rescue; we were having a Sunday get together with family now that Covid has allowed us to do so in East River, NS overlooking the Atlantic; I was delegated to bring a dessert and I chose your Blueberry Cobbler since blueberries are in season and I picked them fresh. Made this recipe. I used cake four instead of regular and used lemon extract instead of vanilla. It came out light and fluffy. Everybody loved it. They couldn't stop eating it until it was gone. Served with vanilla ice cream. Thank you for the recipe.

I just adore you're accent Bonita! My grandparents are from Deer lake and St Johns and you've taken me back into their kitchen! I cannot wait to try this recipe. Finally - Now THIS is what I’ve always thought of as a Cobbler - a slightly thick topping. Many people just put it on in clumps, and don’t spread it all over. This looks delicious! Thank you!

I made this for dessert yesterday and served it with fresh whipped cream sweetened with a little sugar and vanilla. It was a perfect summer evening treat. However it's an even better snack on a thunder afternoon with a cup of coffee (laced with vanilla bean powder and cream). Oh yes...so very lovely! Thank you for this recipe!

My grandparents were from St. Johns years ago. She was a Murphy..Agnes Tobin married name. He was John Tobin. Have relatives still there. They moved to Massachusetts many moons ago. She's been dead for years. She lived to be 100!!! Amasing!! She sounds like you with the brogue. Have others named Roche ...Margaret Roche. Daughter named Regina. Margaret was my grandmothers cousin. Also Murphy. Lots of Murphys...lol

@@bonitaskitchen no ..Margaret is her only name. Shes dead also. She was my grandmothers cousin. I have never been to St Johns. I would love to go. My sister said have to take a ferry over. I have a picture of my aunt Mary who went by Moll my Mothers sister whom looks just like my oldest grandaughter. She is 23. Just got her master's from Southern New Hampshire University in business. She runs the Dr. schedules and time. She is the boss of many things at Dartmouth Hitchock Medical Center in NH where we all live now.She is the image of my aunt...

I could smell and taste this! For those not familiar with canned cream, Fussell's brand that Bonita used is popular in Newfoundland. (Growing up, I had it every Sun night with canned fruit/Jello salad and cold Bird's custard. Mmm!) Here in FL, after several years of searching, to my delight I happened across the Carnation brand in the international aisle at my Publix supermarket. Not quite as thick as I remember, but it works!

Then of course its off to work taping our shows and any other work that needs to be done for our channel. I have made your blueberry cobbler before several times and it truly is one of the top comfort foods on my list. I only wish you had promoted the brand of cream you had dolloped on top before serving. I want the complete Newfoundland experience, please! I have been looking online without luck. :(

I don't think you can buy them on amazon but type in the these types and see how it goes. Maybe your grocery store manager will bring some in. Happy Easter :) Bonita

What is the can cream like? Is it whipping cream or something like cream cheese?

Can cream is much like whipping cream, it got no sugar in it you will have to add it if you like some. This difference is the can cream you will mix in the can by shaking it, instead of in a bowl and mixing it. But it tastes lovely. Garland Best they are very similar but this one is baked and the one you are asking for is steamed, you would cook your blueberries first the same as a blueberry jam, then when it's almost cooked add scoops of the same dough that I made for this one and put on the top of the blueberries. Then cover and steam for about 15 minutes you will see the dough balls be like a sponge, that's the best way I can describe it. I hope this helps you and let me know how it goes. Thanks Bonita

wonderful info ty. whats the difference in cobbler and tradional newfoundland blueberry grunt ? i see online grunt is often made stove top ? is there other variations you could show us ?

Hi Paul and thank you for stopping by and for your question. Your right! The difference is the cobbler is baked in the over with batter on top. The Grunt and we call it doughboys is all done on the stovetop and the dough is cooked in the blueberry sauce. Is the butter unsalted or salted butter? I forgot to put the teaspoon of vanilla extract in the blueberries that actually helps gives a robust flavor.

Hi Floyd. Thank you for your question and for your interest in our delicious blueberry cobbler. If you use unsalted add a ¼ tsp of salt in the batter. If you are using salted butter leave out the salt. You can add the vanilla in the batter, it's nice in the blueberries for sure. Enjoy :) Don't forget we post a NEW video every Sunday!! Bonita

How long have you been cooking it for, if it's not burning let it continue cooking until the cobbler mixture is baked. It can take 40 to 60 minutes and longer in some ovens. Some cookware takes a little longer. Put a pan under the dish if it's dripping in your oven if needed. . This is a tasty dessert. Bonita

@@bonitaskitchen today I did 45 minutes. I put a toothpick in and it came out clean, so I removed it and wrapped it in foil for 20 minutes then ate it a few hours later... I think I will bake for 45 minutes and then put an aluminum foil ring to protect the edges, but allow the center to bake longer... I am using a 9 inch glass Pyrex pie dish.

@@amandachimin2442 Thank you for following up and letting me know. You can use another pan if you wish, I used a pyrex pan for mine too but I've also used a cast iron pan, and casserole pan. You try different ones and enjoy our recipe to the fullest. Have a lovely Sunday and week ahead. :) Bonita

Hi and thank you for your message, this cream is called carnation thick cream and it pretty much a whipped cream in a can. We can buy it local here in Newfoundland but I'm not sure if its available everywhere. If I find a link I will share it with you. :) Bonita

The recipe says 1 cup butter or margarine or less! The video shows much more butter what you added. 1 cup is 2 sticks butter! I would like to bake this cobbler, but I am confused about it.

Hi Ditta: Thank you for your message and for stopping by, I'm sorry about the on clear recipe. The reason why I have one cup or less of butter or margarine is because you can use 3/4 of cup if you like less. I do prefer butter over margarine but it cost more and I always give people the choice. The amount in the video was one cup I had it sliced, I hope this clears up your question and enjoy to the fullest. Merry Christmas....Bonita

@@ditta8416 I just looked back at your message and 2 sticks of butter sound good, we get our butter in a full block and you have to cut it to the size you need. I'm thinking that answers your question. Bonita

That's a tremendous amount of sugar {diabetes waiting to happen} I would recommend making this recipe with half the sugar amounts and I bet it would still taste great.

Hi and welcome to our channel, I'm so glad you enjoyed our blueberry cobbler recipe. The cream and the end is a thick clotted cream. You can use a whipped cream to replace this if you don't have access to it. Enjoy :) Bonita
