Ingredients - dough:
4 tbsp rice flour
4 tbsp potato flour
3 tbsp buckwheat flour
1 tbsp ground flaxseed
1 pinch of salt
2 tbsp oil
150 ml boiling water
Ingredients - filling:
1 cup blueberries
1-2 tablespoons brown sugar
1 teaspoon rice flour
Ingredients - extras:
150 ml coconut or soy yogurt
3 tbsp coconut milk
1 tbsp brown sugar for sprinkling
Method of preparation:
Put a tablespoon each of flaxseed, rice flour, potato flour and a pinch of salt into a bowl, mix, then pour boiling water over the mixture. Quickly mix and blend to make the mixture sticky and smooth. Set the mixture aside to cool.
Add the rest of the flour to the bowl with the flour gruel and knead the dough, to which you add oil at the end and knead again.
If the dough is too thin, add a little of each flour and knead again, and if it is too dry, add a little hot water and also knead. The dough must be smooth and malleable.
Boil water in a pot to cook dumplings, and add a teaspoon of rice flour to the berries and stir.
From the dough we tear off a large piece of dough at a time, which we roll out on a silicone mat with a non-stick roller.
Cut out disks with a glass, on which we put a teaspoon each of berries and a little sugar, and then gently close the berries by folding the disk in half and sealing the edges of the dough.
Cook the patched dumplings in batches in salted water for a few minutes after they float.
The part of the dough that is waiting to be rolled out must be kept covered so that it does not dry out from the top.
Pour yogurt mixed with coconut milk over the top of the dumplings, sprinkle with sugar and you can serve.
