The second video from my Nova Scotia trip I take advantage of the supply of fresh wild blueberrys to make this simple and delicious dessert. In BC, where I am from, the fresh blueberries are cultivated, rather than wild. Wild blueberries are smaller and have more intense flavour. This recipe will be delicious with whatever blueberries you have, be them wild, cultivated, fresh or frozen.
Ingredient list for this recipe:
4 cups blueberries (fresh or frozen)
1/2 cup sugar
1/4 cup water (if using frozen blueberries you may want to eliminate)
1 tablespoon fresh lemon juice
1 cup all purpose flour
1 tablespoon baking powder
2 tablespoons sugar
1/4 teaspoon salt
2 tablespoons cold unsalted butter, cut into cubes
1/2 cup milk
Whipped cream optional (1 cup heavy cream, 1 tbsp sugar, 1 tsp vanilla)
