Bombay Duck 6 nos.
Marinade:
Green chutney 1 tbsp (of 3 green chillies + a handful of coriander leaves)
Salt 2 tsp
Chilli powder 2 tsp
Turmeric powder 1/2 tsp
Kokum saal (unsweetened juice) 1 tbsp
Other Ingredients:
Semolina 80 gm
Oil 120 ml
Accompanied with fresh red onion and lime wedges
1. Clean and wash the Bombay ducks.
2. Slit one end of the centre bone down. Slit around on the other side of the bone as well and remove the centre bone to make each bombil into a fillet type piece.
3. Place the fillets in a colander. Place a lid over, that fits into the colander and let it drain off its excess inherent water/moisture content
4. Marinate in Ingredients mentioned above. Keep it marinated for 20 minutes.
5. Dab the marinated bombil in Semolina on both sides well.
6. Heat oil, shallow fry the bombils for 2 minutes on each side. (do not touch the bombil in the 1st 2 mins of frying)
7. Serve immediately with fresh red onions and lime wedges.
