Awesome job a little tip when you add alpha amylase you then add Gluco amylase also know as beta amylase it is naturally occurring in malted grains but not in alpha it helps to break your sugar chains down even further making it more fermentable and your yeast doesn't half to work so hard creating off unwanted flavors...Shine On
