A lot of countries in West Africa especially west have their variations of this dish ….but how they are made the level of heat varies from country to country and person to person.

Charleston and Savannah red rice is a variation of jollof rice that enslaved Africans brought with them to the low country. It is a staple in Gullah/Geechee culture.

Although this looks yummy, you might want to search out more traditional Ghanaian jollof rice recipes. There are several Ghanaian you tubers whose channels are dedicated cooking and they have great, easy to follow content. While you're at it, explore jollof from Nigeria, Senegal and other places too.

Liberia (a jollof rice leader) and Nigeria have often tied during in-person Jollof rice contests-hats off to Ghana for this promo. The addition of mixed vegetables in this clip mirrors the Liberian style. Although Senegal is believed to be the creator of Jollof among West Africans, they don’t seem to participate much in the US-based jollof rice festivals. I enjoyed this video and know that Jollof must have been truly amazing and sweet-oh!

Senegal is the origin. It is a documented fact that rice was native to and grown in the Senegambia region. The rest of West Africa depended on root vegetables (yam) and corn as their main staples.

I do TexMex but the spices and how its cooked tend to be different for me. But the technique almost seems the same.

Enslaved Africans were carried to Mexico. The origin of TexMex rice is not Spanish or Mexican. It is the legacy of African cooking in the Americas. Versions of the rice are called Creole Jambalaya in Louisiana and Red Rice in South Carolina.

SMH. This is NOT authentic Ghanaian jollof. I get that it TV but the sauce has to cook down before adding rice and any liquid. 👀 I guess if the audience isn't West African, anything goes. 🤦🏿‍♀️🤦🏿‍♀️
