Bon Appétit Test Kitchen manager, Brad Leone, is back for episode 24 of “It’s Alive.” This is part 2 of Brad's adventure to learn how chocolate is made. I love how different he is when he is dealing with his peers and when he's dealing with the older man who owns the company. He's more calm and respectful when he's talking to Gary Guittard whereas when he's talking to the company workers and Vinny he's more laid back and playful.

I'd say that he's more or less reading someone, and making an assessment on how to approach them in the best way; he probably saw that being dignified would have worked better than being more loose and playful. Golden retriever energy grants you that kind of foresight.

I love Brads different social demeanors. When hes in the jungle cutting cocoa pods from the trees, hes all "OH LOOK A PUPPY" "WHATS THAT?!". But then when hes talking to the CEO of Guittard, hes very knowledgeable and composed. This skill seems to be a really valuable one, where he can just blend in and get along with everyone.

The fallen Pods start fermenting by themselves so if you catch one at the right time and dry the beans in the sun they're going to be quite delicious as they are. This could robably also occur naturally on a hard surface. The indigenous people of mesoamerica likely developed this process over centuries and even made a cocoa drink but chocolate was only invented much later.

Alongside accidental and natural methods mentioned above, probably years and years of trial and error. Science, even at an imbeciles level has always been a thing so out of billions of people, SOMEBODY had to try every little possible thing to lead up to what we have now. The accidental methods were probably just paving the way so people realized that *something* could be done there Plus as mentioned, someone could have stumbled across it at the right time and put in the effort to acheive the same taste after realizing not all of them tasted similar

Derek Martz processes like this get discovered little by little over the years. The most basic level humans were grabbing anything off the trees and eating it. That turns into knowing that this fruit was edible. From there it just gets discovered slowly by things like storing them. Which probably led to the whole fermentation process and the drying process. in the case of chocolate it was taken out of South America into Europe and then it was discovered that by mixing it quite a bit it would turn into what we know as more modern chocolate and those steps are discovered pretty much by accident. But when you look at foods in general you will notice that most of it is trial and error with early humans it was just about trying to get nutrition and after fire was discovered it was about trying this process on all different foods. But when you notice things like curing and salting it was all about preserving. Which is how most of this techniques were discovered. So we have a bunch of humans just crawling the whole earth grabbing fruits and animals and trying to preserve them in order to survive. And that is how all this process and get discovered. I can’t imagine how the first people who made alcohol felt. Like they grab this fruit and stored it and then went back to drink it and it make them all crazy.

DragonFire3640 i second this. I live in Ecuador and most people, even if underpaid and quite poor, live just fine. People in Ecuador get overall paid very little. So, given that is mostly a job with no academic qualifications (even if it is quite a nice trade) the little pay makes sense.

OT I live in a farming town in the highlands of Nicaragua, you can make the argument that everyone should be making more money. But $13 each day is a luxury living - cost of living is so low. It only becomes a problem when unnecessary luxuries are introduced and people are told that they have to have them.

No joke, this was a terrific set of videos. I haven't seen a full video from beans to chocolate bar and that has gone into the subtle nature of chocolate making. Brad and Vinny are funny as always and the final statement at the end by brad was terrific about appreciating how much goes into things. Great videos to watch stoned.

I’ve been making a really nice cold brew chocolate drink for a couple years now. 1/2 cup cacao nibs, coarsely ground like coffee, soaked in 8 cups water for at least 8 hours. Strain it through a coffee filter and you’re ready to go. It’s neither sweet nor bitter, but has a really nice pure chocolate flavour to it. Works best if you mix it with a heavy cream, add it to coffee, or especially with a nice Canadian rye whiskey. You can also sub out half of the cacao for coffee beans to make a cold brew mocha.

Learning about how chocolate is made in pastry school was no competition to these videos. Excellent job at really breaking down the process into understandable pieces. It was incredibly cool to see the chocolate we used being made. Once again Brad is crushing the game!

Mole is probably the most interesting thing you can do. I know you said no cookie recipes, but whenever I have chips and salsa, I always crave a chocolate chip cookie. Maybe something spicy and chocolaty? Some sort of cold brew coffee and chocolate concoction? Make something using the Guittard Grand Cocoa powder. The one that comes in the brownish cylinder. I use that for cakes, and it always comes out amazing.

This was a fantastic set of videos. I just wish you had also shown some of the side products, like the juice you get from the fermentation process (which apparently is delicious), or the "cocoa butter" that you get later on, which is used in milk and white chocolate. I'm fascinated by the process but so far I haven't been able to find a video that shows cocoa butter being made.

When I opened my cafe/coffee roasting business, it was fascinating to learn about the whole process from farm to cup. It's quite similar to chocolate except for the fermentation step. Was also given really good chocolate by some amazing suppliers to develop a really good hot chocolate (dark, no added sugar and really thick)...

The guy from lie to me? Oh, I looked it up. He is based on a real scientist. Also, he is OBVIOUSLY not the only one that can do that. Some people can do it naturally, others can learn it. It's a very useful skill.

I live for the moments in these videos when Brad shows his love for things (even when they have nothing to do with the main object of the video). Brad's love of the redwood trees in part 2 and the little puppy in part 1. Priceless.

Chocolate is awesome. I love blanxart chocolate. It's super good for the farmers who harvest the coco Beans. They used to have regular flashlights so they could work when it was cooler in the evening. But then the batteries ran out and they just buried them which was bad. Now they have solar powered flash lights to keep the environment battery free!

brad and vinny, you're getting me through some 23-hour work days. i watch you while i'm waiting for uploads, and you're saving my head from exploding. and p.s. for part three: i find it interesting when you've added cocoa to savoury recipes -- let's see more of that. maybe a badass chili, now that the weather's getting colder. alternatively, you could create a life-sized claire made entirely of chocolate. either/or.
