Braised Red Cabbage - German

Jack Scalfani gets some German going with this simple side dish.
Here is the recipe:
Ingredients:
3 1/2 lb red cabbage (1 medium head), quartered, cored, and thinly sliced crosswise
4 bacon slices, chopped
1 tablespoon unsalted butter
2 large sweet onions, thinly sliced
1/2 cup white-wine vinegar
3 tablespoons packed brown sugar
1 tablespoon salt
1 teaspoon black pepper
preparation
Rinse cabbage under cold water, then drain (do not pat dry).
Cook bacon in an 8-quart heavy pot over moderately low heat, stirring, until crisp, about 3 minutes. Remove bacon with a slotted spoon, reserving it for another use. Add butter to bacon fat, then increase heat to moderate and cook onions, stirring, until golden brown, 12 to 15 minutes. Stir in cabbage, vinegar, brown sugar, salt, and pepper and simmer, covered, stirring occasionally, until tender, about 1 1/4 hours.

I'm from Germany and i can tell you that this just looks like made by a german grammy :D It looks absolutely delicious. We normally have this here on Christmas with roast and lumps.

This is one of my favourite things to eat whenever my oma cooks. And as somebody else already suggested, the use of apples works really well. Great work!

@JustNess78 they can just use extra butter. Vegetarians are not idiots. They know how to substitute.

The movie looks really good. I will have to see it. The cabbage dish is really good. I have made it many times--my family is of German decent. Those are also some of the key ingredients in German potato salad, which is a delicious dish of its own. remember though, cabbage cooks WAY down, so if you are feeding many, use a lot more.

@CarryZi The sour and sweet smells mixed together. German food has very strong flavors. These smelled like a German place we go to called Old World in Huntington Beach. Same food smells.

we eat this for christmas in sweden, but with apples and regular suger and no bacon and onions. We also have allspice becouse its very common for swedish christmas food.

Oh man, as a kid I had to grow up eating all traditional German foods. I didn't mind much then, but as an adult I can barely even look at them. I bet that cabbage smell would make me gag. I'm gonna make that Thai Chicken Curry though, looks amazing.

I grew up in Poland (its next door to Germany for those who don't know ;D ) for the first 9 years of my life. We make something very similar. I don't eat bacon (Jewish - not veggie) so thank you for showing a alternative! Oh god cannot wait to try this. ^_^

Looks just like when Ralphie opens the pot in A Christmas Story. I had that once in a German restaurant outside Chicago. It was served along with some brats and sauerkraut. Mmmm.

Kick it up a notch with a teaspoon or two of caraway - cabbage loves caraway. By the way, that's a Lodge-branded Chinese dutch oven, as all their enameled products are. Lodge still makes the original black cast-iron ovens in the U.S. - if that even matters to anyone. And true cast iron isn't nearly as scary as people make it out to be. It's one of the few times you can buy American and actually get 100% American.

I'm Danish, and we got the same dish, we use it too meatballs, duck breast or legs and roast pork it's completly amazing! :D - hope you will try it Jack it's soo great!

swap your bacon for apples and use apple vinagar and you have legit German Rotkohl. A perfect side for any German meat dish. But I am intrigued by the bacon. I wouldn't say no to a taste :). I save the Bacon or speck for the sauer kraut

Good job jack! you did a perfect "Blaukraut" (if you want, put some apples in, instead of that much brown sugar ) btw that´s a garnish to roast beef with potato and crouton dumplings with a gingerbread sauce ... I would really looking forward seeing you creating some potato dumplings and a "Sauerbraten" in the show ... Greetings from Bavaria - keep on cooking :-)

@Spunn3d He doesn't ship outside of the US. He did in the past, but (if i remember this right) the jars broke too often during shipping. He uses glas jars.

jack the reason they say don't pad dry it is because red cabbage(like beet roots) dyes the fabric it comes in contact with. i did that mistake around chistmas with one of my mom's white kitchen towels, she wasn't happy with me after that

we always make it with apple, apple juice (you can get in any store), the same amount red wine, a bit of sugar, salt. it goes very well with duck breast and orange honey sauce (that's what we always make for christmas) or any kind of "heavy meat" :))))) greetings from vienna ^^

@WolfWoot if you eat alot of it, it actually does. If you wanna force that, drink a glass of red cabbage juice. That almost guarantees red pee.

This dish is not only German but common throughout central europe, as one viewer commented it is usually made with apple, and instead of white wine vinegar use cider apple vinegar, also you can add some raisins and cinnamon. This goes great with pork. Maximum flavour minimum price. In holland you can buy it pre-made in frozen blocks, it costs very little.

I love my enamel cast iron! so much so I started getting the frying pans! they are SOOOOOOO much better than non stick! SERIOUSLY TRY IT! YOU WILL FALL IN LOVE! I got the eco pans and I will never go back to non stick ever....

@JustNess78 bacon fat is up to the vegetarian. Bacon fat is a byproduct of the animal and not the meat so that would fall under vegan. Vegans don't eat dairy, eggs, or anything made or produced from an animal.

I think this dish is either North-German or maybe even Danish. I'm from Denmark, and this is VERY similar to a dish we make called "Rødkål". It literally translates to "red cabbage" :)

@xdaysx I am associate producer on the movie. I also manage the Director Greg Derochie and manage the screenwriter Charles Scalfani. The pot I am madly in love with is a LODGE DUTCH OVEN that I bought at walmart. It is amazing. it's about $50 but I use it for a lot of cooking on the stove and in the oven.

@Applefanboy94 also Apfel gehört eigentlich schon rein. Auch genannt Apfelrotkohl. In manchen Regionen wird er durch Rosinen ersetzt.

Hi Jack. I´m German and we usualy put some Apples in the Red Cabbage. Just a little for a little bit more sweeter taste. Just try it it´s awesome ;-) And keep on with the good work I love your Vids :) But some of the ingredients are quite hard to get in Germany. and sorry for the bad english :D

that reminds me.... LOL! my cousin used that strainer spoon and he was using it for deep frying then later on it melted and he had to throw away the spoon oil and the meat that was in the pot LOL!

@CuriousCosmo09 actually the red cabbage has a totally different taste than any green kind of cabbage. the green ones have a stronger taste (+ each kind of cabbage tastes totally different o.o it's awesome!!). I've never eaten any kind of green or white cabbage with sugar.. the thought sounds really awful to me ;D @jakata69 you should've put small apple slices into it. apples and red cabbage are like... the best thing in the world.
