Liquid smoke is exactly what it sounds like. Wood is burned and the steam or smoke is concentrated until it becomes a liquid...it’s very expensive and a quite tedious process. It’s sold at grocery stores
Bacon's popularity stems from a massive marketing campaign by "big meat" in America as a way to make money from pork bellies which at the time hardly anyone was buying. Here in the UK pork belly bacon (which we call streaky bacon) is not very popular, the majority of our bacon is back bacon which is usually called Canadian bacon in the USA.
