Guide:
1. Preparation: Trim the skirt steak to uniform size, remove silver skin and excess fat.
2. Marinating: Combine steak with brisket mop, marinade, and broth in a Ziploc bag. Marinate for 2 to 24 hours.
3. Assembly: Layer the marinated steak with provolone cheese and sliced peppers. Roll tightly and secure.
4. Cooking: Smoke the roll at 300°F for about an hour or until desired doneness.

Philly Cheese Steak Skirt Steak Pinwheel
Ingredients
- Snake River Farms - Wagyu Skirt Steak
- 6-8 Slices - Provolone Cheese
- 1 ea - Sliced Onions
- 1 ea - Sliced Red Pepper
- 1 ea - Sliced Yellow Peppers
- 7 oz - Kosmos Q - Competition Brisket Mop
- 2 tbsp - Moore’s Original Marinade
- 20 oz - Beef Broth
- Heath Riles BBQ - Beef Rub
Directions
1. Roll up the skirt steak into a roll and trim off the excess to make it uniform.
2. Remove the Silver Skin and Excess Fat.
3. Place in a Ziploc Bag and add in the 7 oz - Kosmos Q - Competition Brisket Mop, 2 tbsp - Moore’s Original Marinade, and 20 oz - Beef Broth. Marinate for 2 to 24 hours.
4. Remove from the marinade and season with Heath Riles BBQ - Beef Rub.
5. Add the Provolone Cheese, Sliced Onions, Sliced Red Pepper & Sliced Yellow Peppers.
6. Roll up into a roll and secure with martini skewers and tie with butcher's twine.
7. Place in the Recteq Smoker at 300°F for about 1-hr or until the meat reaches an internal temperature of 128°F or your desired doneness.

@@markmccaleb4038 next time I am going to add 1/4 cup of vinegar and marinate it overnight. “Vinegar has acidic properties that can help break down the meat's proteins, making it more tender.”

First time here and those pinwheels look crazy delicious....I was trying to understand why you said the bite was a bit chewy seeing that you against the grain. The only thing I would of done differently was give it a quick sear all around then finish it indirect until you reached your desired temperature.... although some say when cooking skirt steak instead of cooking it to medium rare go to more medium and you'll get a better bite. Now I'm only saying this because of all the videos I've watched and bbq channel that I follow because I live in Trinidad & Tobago and skirt Steaks cuts are not readily available in the groceries here. Mighty Fine! I would live to try it with whole beef tenderloin (2 years ago, I found some whole, trimmed one's at WinCo, about 4 1/2 lbs each at $ 7.98 per pound. I bought 6 and was a very popular person for 6 months!). I'll be at Winco again this week and fingers crossed that I can find a similar deal, even $11/lb would be fantastic. Great show Bud.
