Yeah man. Definitely agree slightly larger tanks are optimal, long and low ideally like a 20 gallong long. Only thing I'd add if that's okay is established tanks are way better than new set ups.
Great video mate, I've just started with shrimp, but I've got them in a small grow out tank small plecos, ive no babies yet but I've got a few berried shrimp, like yourself I'm feeding the plecos not the shrimp.
Baby shrimp need an abundance of biofilm, larger tanks provide that, in smaller tanks, feeding a baby food or powdered flake gives them something to feed on if the biofilm is not there, but uneaten powdered food creates biofilm
