That's on hell of a setup. How is the fermenter cooled? Is it pressure fermented?

Cheers mate! Yeah this one you can pressure ferment (I didn’t this time) but it’s cooled via a glycol cooler pumping liquid through a cooling coil inside the fermenter

Why do you add phosphoric acid to mash water prior to mashing (or at all for that matter)? Looking forward to seeing how they turn out!

To lower the pH of the mash, typically when using pale malts the mash pH will be a little high, so I add acid to drop it between 5.3-5.5

Cheers mate! Yeah tbh not strictly necessary, but I always like to start with as clear wort as possible then allow the haziness to come from the hops themselves, just personal preference tbh
