[Original postdate: Aug. 12, 2011] The King is in the building! NB foot soldier and determined yeast junky Jeremy King (you remember him from Episode 4, right?) is back with yet another twisted yeast experiment. This time he's trying wrangle wild yeast from his environs in Milwaukee, WI for eventual commercial use. He's got a very interesting way of going about it - utilizing a coolship. Wild yeast, microscopes, fire, and fermented fish. You never know what you're going to get when you're hanging out with J-King. Prepare to be - KING'D!

I've asked King to write up an update for the Northern Brewer Connect page. Basically, he succeeded, Wyeast propped the strain up, and Lakefront brewed a beer called Wisconsinite using the yeast.

NCSU harvested yeast from a bee and called the beer “bumble beer” They also found yeast from a wasp that can make sour beer by itself in a week

Nice! The fire sterilisation is a bit OTT in my opinion though. You're going to get traces of the soot if not the alcohol and the sponge is probably teeming with bacili. Then he plonks that super strength black beer in there which has been sat 24 hours or more collecting bacteria! Stiff brush, hot water and loadsa cheap hops will sanitise your brew space sufficiently for wild beer. The rest is down to chance anyway. keep it wild!

I think that fermented fish thing originates from Sweden. In Iceland they do something like this with shark called Hákarl.

I just did a home steam buffet Trey cool ship. It's been a few days now next to an open window (completely covered with porous cloth) and I've got white mold dots everywhere. Should I throw it out?

I've been trying to find something like your fermenter, have struck out many times. Is it possible to get some dimensions on it to build my own? or maybe some links of known sellers? Good show, need to try and capture my own yeast.

I would try mashing up some local fruit in a jar of water and covering it with cloth. Might have less bacteria/flies.
