British Family Makes & Tries Skyline Cincinnati Chili SO HAPPY
In todays video Mrs H along with the help of Baby H, will be making and tastings the American dish "Skyline Cincinnati Chilli"
Huge Thank you to Deb Hinkley from Ohio X
Skyline Chili is a chain of Cincinnati-style chili restaurants based in Cincinnati, Ohio. Founded in 1949 by Greek immigrants Vasili Katsamakis and Nicholas Lambrinides,Skyline Chili is named for the view of Cincinnati's skyline that Katsamakis and Lambrinides could see from their first restaurant (which has since been demolished), opened in the section of town now known as Price Hill. It is also the "official chili" of many local professional sports teams and venues, including the Cincinnati Reds, Cincinnati Cyclones, Columbus Blue Jackets and the Kings Island theme park, and also sponsors the Crosstown Shootout, an annual men's college basketball rivalry game between the city's two NCAA Division I teams, Cincinnati and Xavier.
In 1912, Nicholas Lambrinides emigrated to Cincinnati from Kastoria, Greece, and brought his favorite family recipes with him.To save up the money to bring his wife to America as well, he first worked as a cook for a railroad crew and in a hotel kitchen, then opened a short-order diner. After nearly a decade, his wife was able to join him in Cincinnati and they raised five sons.

Living in Cincinnati, Skyline is a way of life. Yes, raw white onion as a garnish, and there is always a bottle of hot sauce on the table at skyline. If you look, it also has cinnamon and chocolate in the sauce. People find it strange, the whole spaghetti and cheese thing, But what can I say, It really works. I have friends on facebook, and often put a wager on football games, If I lose, I pay in skyline, and If I win, I get something to their local to eat. Makes it kinda fun. Sent some cans of Skyline to San Diego, they took pictures, and loved the Cincinnati Chili. Glad you enjoyed it. And yes you can add beans if you like. But lots of Cheddar cheese.

Being a Cincinnatian, I LOVE Skyline ! Most people say Cincinnati chili isn't REAL chili, and they're kinda right. It's more like a chili sauce. Try it with fresh chopped onion and cheddar cheese (my favorite !), and/or with beans and cheddar cheese ! Some people add crushed saltine crackers to their chili. Either way, you can't go wrong ! For a cheese coney, start with a hotdog bun, add hotdog, mustard, and/or chopped fresh onion, chili sauce, and top with cheddar cheese. Like it spicy ? Sprinkle some tobasco sauce or your favorite hot sauce on top ! YUMMY ! I could eat this every day !

I was raised on chili con carne with beans, but when I moved to Texas, I found out that Texas chili is made without beans and is thickened with masa made from corn. Neither sort of chili was served with rice or pasta. Hot dog chili is always made without beans.🙂

In NY if it doesn't have beans it's meat sauce, and requires beans to be called chili.
@Wiley_Coyote

Yeah, there really are three major kinds of chili in the US. Texas style, Cincinnati style (arguably just meat sauce, with different spicing) and Chili con carne (I think in Texas they just usually call it Texas Red, because god forbid they properly credit Spanish speakers. 🙄). There are rarer outliers like White Chili, and a few more kinds adopted from Mexico, too, I guess.

I always start with a big batch of homemade traditional chili with beans and tomatoes; then we have bowls of chili with crackers. On day two, we can have chili with crackers, make Frito pies, or top onto a burrito. On day three, I thin out the chili using beef broth, never water, and I make chili mac using macaroni. If there is any chili leftover after that, I put it in a freezer bag and freeze it. When someone wants chili for chili dogs or a grilled chili and cheese sandwich. We can thaw it out and have more chili in whatever combination we want!

Mr. & Mrs H - So glad you enjoyed your first Skyline Chili because for many people, it's an acquired taste. I lived in Cincinnati for 27 years. I didn't know about Skyline Chili before I got there. I didn't really care for it at first. But over time I came to love it. I moved away from Cincinnati in 2014, but fortunately I returned on business many times. Skyline was always my first stop when I got to town. Well done!

I LOVE Cincinnati chili. It is a bit sweeter and has cinnamon which gives it a completely unique flavor. You’ll find in the US there are many different kinds of chili. Some people swear by only meat, no beans, others add beans, sometimes it’s over rice, sometimes it’s just in a bowl with cornbread on the side. Like most things in America you can find chili made 1 million different ways.

I'm from the Cincinnati area so I was thrilled to see you make Skyline-style chili! I love it! I laughed when the smoke alarm went off. It reminded me of visiting a friend's house that she shared with about five single girls. One of the housemates had a parrot and whenever the parrot would see a certain girl, he made a sound exactly like the smoke alarm going off! Apparently, when it was her turn to cook, she'd set off the smoke alarm, and the parrot associated her with that noise so when he'd see her, he'd make the smoke alarm sound every time! It made her so angry, which made it all the funnier. Baby H is beautiful and getting so big! Good job, Mrs. H, move over Nigella!

Cincinnati native here! This kind of chili is also served on hotdogs with cheese, onions, and mustard. Personally I like putting mustard on the 3-ways as well. Also, there are unspoken rules to eating a 3-way, you don't twirl it like you would normal spaghetti. You cut it with your fork then scoop it up so it still has the distinct layers.

Cincinnati native here! 1. Kinda shocked you liked it! Most "out of towners" don't 2. Any other cincinnatians get mad when they twirled it?? 😆 (it is supposed to be cut and scooped- so the pasta/sauce/cheese ratio is even. Call me crazy but it tastes better that way) 3. Onions go on top, not in the chili- raw white onions before the cheese 4. Lingo lesson- Adding the onions or beans makes the 3way you ate in this video into a 4way, and then both onion and beans is a 5way. 5. Cheese coney is a hot dog and bun, yellow mustard, chili, onion and cheese.... aka perfection. Enjoyed the video!

Growing up in Greater Cincinnati this is a staple in this area. The restaurants that serve this are generally called "chili parlors ". I didn't realize what an acquired taste this was until I moved to Hawaii and made it for my friends and they hated it lol. I couldn't wrap my head around it then. It is perfectly acceptable and expected that you can add hot sauce... with bottles of it kept on the tables in the parlors. Kidney beans and onions are also choices to top your chili along with oyster crackers. It's also great on hot dogs. Btw, chili on rice is the preferred way in Hawaii...I grew to love it and my kids that were raised there actually prefer it. Thank you for always brightening my day... kisses to Alanna.

The way I make chili in the California is that I *do* brown the ground beef. I also saute chopped onions and bell peppers and garlic. I add canned tomatoes and either tomato paste or tomato sauce and beans. I don't use what you call a seasoning sachet or what we call a seasoning packet because they usually have so much salt in them, instead I put chili powder and cumin in my chili.

As a transplant to Cincinnati, I have to think of Cincinnati Chili as a "meat sauce" over spaghetti because it is not chili con carne/TexMex chili that I grew up eating. There is a 3-way, 5-way, and it even goes higher than that during festivals, if you add raw diced onions, cheese etc... Then there's the coney dogs you referred to. To make that you will need: a short hotdog, mustard, diced raw onions, and about 2 inches tall of finely shredded yellow cheddar cheese. I take about half of that off and give it to someone else in our family who loves Skyline cheese. To be fair, this is just Skyline. There is another main competitor: Goldstar (the one hubs and I like the most), and several other restaurants local to the side of town, neighborhood, or township you live in. They all are seasoned meat sauces and not all that "hot/spicy". I would not eat a bowl of Cincinnati Chili, but it is good on spaghetti with onions and cheese, OR as a Cincinnati coney dog. There are other recipes in other states and localities for what they call coney dogs as well. Oh... and if you order from Skyline or Goldstar, you get the oyster (shaped) crackers as well. As with any new place one moves to, Cincinnati Chili is an acquired taste. Many families have their own recipes and they won't share it. LOL! Enjoy!

Chili con carne was actually first made by the wives of Mexican American immigrants in San Antonio, Texas in the late 1800s. It's purely a Tex-Mex dish based on the Mexican dish carne adobado using beef instant of pork. True original Tex-Mex chili con carne does not contain beans and some chili purists will have something to say if you put beans in. I prefer it with homemade pinto beans personally and I'm a native Texan. Skyline chili is actually good in Cincinnati. I've tried it before. As far as the know we don't have it here in Texas.

We also crumble cut up pieces of raw onion and sprinkle on the plate of spaghetti. Then we spread oyster crackers on it. In Cincinnati, they have a 5 way chili. Onions, crackers, cheese, beans, chili sauce and spaghetti. But I still love our regular chili that everyone generally makes.

I live in Cincinnati. Great video! It was funny when you added a little cheese. Here is is served with a giant mound of finely shredded sharp cheddar cheese. A bit too much really but the locals like it. You should try it as a cheese Coney as well which is as popular here. You basically make a hotdog and add the chili and cheese. Onions and mustard go nicely as well. A very popular dip can be made as well. "Skyline Dip" It's layers of usually the chili, cheese, sour cream, sometimes refried beans, jalepenos etc that you serve with corn tortilla chips. You won't find a Superbowl party in Cincinnati without it.

I love homemade chili, mostly during the winter months. I don’t serve my chili with pasta or rice. My recipe begins with sautéed diced onion, chipotle chili powder, ground beef, tomato sauce and paste, dark red kidney beans. Sometimes I also add black beans, too. Toppings include chopped onion, cheese and sour cream.

Texan here… and a purist when it comes to chili. No beans for us but if you must, use pinto beans rather than Kidney beans. This recipe is what we call “bean stuff”. 1 lb ground beef browned with one rough chopped medium onion. Add some minced garlic & cook 30 seconds more, stirring. Salt & Pepper Drain excess grease. Add 1, 15 ounce can of Ranch Style (brand) Beans (with or without jalapeños). 1, 15 ounce can of Pinto Beans. 8 or 16 ounces Tomato Sauce (depends on how thin you want the liquid). Cook till heated thru check S & P seasoning & adjust as necessary. Serve piping hot, top with grated cheddar, chopped raw onion and if you wish, original Fritos corn chips & avocado. If you don’t have the beans in your local store, try Amazon.

I'm from the outskirts of Cincinnati and when I was growing up we had a variety of Chili restaurants to choose from. Skyline Chili, Gold Star Chili, Empress Chili, Blue Ash Chili and Mt. Washington Chili. I prefer Empress and Blue Ash over the others, but Empress is hard to find these days. When I want Chili Spaghetti(3 way, 4 way or 5 way) I make my own Chili with all fresh ingredients(a 3 day cooking process) and it tastes so much better. Cheese Coneys are another dish I use my own Chili with and I use much better Hot Dogs than what the restaurants use. The Cheese should be FINE SHREDDED Sharp Cheddar(I like Extra Sharp Cheddar better) for best results. I found that the older I get, the more heartburn I get from eating the restaurant styles due to them using processed foods more than they used to do.

@@marionlcarpenter6255 My Wife is real picky with certain foods and tomato is one of them. The ONLY tomato based product she likes is ketchup with fries. That's it. She didn't like chili until she tried my chili. It has to be made with fresh ingredients, I can't substitute the juice with store bought of any brand. It doesn't taste the same, I tried. I grow most of it in two different gardens, a big one that changes crops every year and a small one for kitchen use that gets a little bit of everything every year. The big one is for canning and works on a 3 year cycle. Corn and Peas for one year, Beans and Tomatoes the next, followed with a mix of the first two years. It ensures us with enough food for 3 years before running out. The Chili Juice is a #1 Priority, she panics when we get below 2 1/2 years worth of supply. lol That's why I keep jars of chili stocked as well as the chili juice. She can have homemade chili any time she desires it now. Pints for individuals and Quarts for a family meal. Our pockets might seem empty at times but our bellies will always be full. 👍

I like rice in the chili instead of over noodles. I make a pot of chili one day.. leftovers are next day, I make noodles for my hub and rice for mine.. so we get different meals out of a pot of chili. And I make with 3 or 4 different beans instead of standard light kidney beans.

Spaghetti, chili, and cheese. 4 way is with raw onion. 5 way is with onion and beans. Skyline and Goldstar are the 2 main chili places (que the chili war) though there are a couple lessor known chili places as well. Empress Chili and Dixie Chili are 2 of them.

When I describe Cincinnati style chili to people from out of town, and/or who have not had it before, I have a tendency to clarify that it's more of a meat sauce than it is what you would traditionally think of as "chili". It tends to help people accept it more readily, as when they get the word "chili" stuck in their head, it can color or dampen their experience because it's not what they're expecting. Not saying some people just don't like it. 😉
@josephbridges7470
@josephbridges7470 2 года назад
As someone not from Cincy, it was odd to discover that its just a bolognese style sauce done in a Greek way. I have a feeling that the first immigrants who were trying to sell it called it "chili" to "Americanize" it and the rest is history.
@jeffrconner
@jeffrconner 2 года назад
@@josephbridges7470 that's pretty much exactly what happened. It was easier to market it with that familiar name/term. Now, it's just kind of become its own thing. And again, naming is a difficult thing. For instance, it doesn't taste like any Bolognese I've ever had, so if somebody told me it was a "Bolognese", and I tasted it, I would probably have the same prejudices as someone eating it for the first time when it's called chili. :-)

I went to high school in Cincy. My first visit was wrong. I was used to eating a bowl of chili. My dad, who had experience, said, That's not the way to do it. When I started eating 3-ways and chili dogs, I was hooked. I went to high school in the 80s. On Weds, one chain, Goldstar, offered 25-cent chili dogs. We high school boys took full advantage. I got 4 or 5. One friend would eat 10. Later, a friend taught me to order chili-cheese sandwiches. She said, Why waste room in your belly on a cheap old hotdog? You want chili! Now my order is one or two C/C sandwiches and a 4-way onions. It should come with oyster crackers and hot sauce. The cracks add crunch and soak up the oily goodness on the bottom of the plate. Yours looks very good, but it should be MUCH thinner. It's more of a sauce.
