In the heart of a charming Southern town in England, Mr. H, Mrs. H, and Baby H decided to embark on a culinary adventure, delving into the soulful world of Southern cuisine. Inspired by the rich flavors of Louisiana, they set out to make the quintessential Jambalaya from scratch, bringing a taste of the bayou to their own kitchen.
The scene was set with lively jazz playing in the background as Mrs. H took charge, skillfully chopping and dicing onions, and celery. Mr. H, donned in a classic apron, stirred a simmering pot filled with a fragrant blend of Creole spices, diced tomatoes, and aromatic garlic. Baby H, with wide-eyed curiosity, observed the vibrant medley of ingredients, eagerly reaching out to touch and feel the array of textures.
As the enticing aroma filled their home, the H family couldn't help but share laughs and stories, creating a warm atmosphere reminiscent of a Southern family gathering. Not to confuse you, but when using tomatoes, it is a Creole Jambalaya, and without, it's a Cajun Jambalaya. And a side of cornbread works well.

So glad you said this. My family is Southern Cajun..I no longer live in the South and people confuse this all of the time. Most people don't know, or confuse Creole & Cajun foods.

Yup exactly, I've lived in North Louisiana all my life and never use tomato in mine, it's always referred to as Cajun in that case. Still looked very good though, nice work.

Jambalaya and paella are cousins. New Orleans was Spanish, and French, before it became American. I'm glad you enjoyed it! I live in Louisiana.

“Haich” is how they pronounce the letter “H”, it’s not their last name. Like the way we pronounce it is “Aich”, it’s like when they drop the pronunciation of the R in a word but we still pronounce it. “Mr. H” is “Mister Haich” for them but “Mister Aich” for us. But I don’t know what their actual last name is, other than it starts with an H.

I was a chef for over 40 years and we always put shrimp in our jambalaya. The only other thing I want to mention is it looks dry to me it needs a little bit more liquid. I would add a quarter cup to a half a cup of stock or some water, otherwise it looks delicious. ❤🇺🇸🙏🏻✌🏻

It depends on the jambalaya. I'm not a chef, I'm just a cajun who cooks and grew up eating this. It doesn't look dry to me and typically sticks together a bit. We don't put shrimp in jambalaya unless there is some leftover shrimp or it is in season. That's because most of us can just go down to a shack and buy some fresh rather than a grocery store.

@@melissas4874 We made it for years in the restaurant and we always had shrimp in it and ours was much juicier. There was a little broth. That is what I'm used to.

Please come ro Louisiana on your next trip to the states. Swamp tour, food, go to Cafe Du Monde for beignets and coffee (maybe cafe au lait if you like it. They're known for it), ice cream at Creole Creamery. I know others could give other suggestions. It's not all party culture in New Orleans. They have family friendly stuff. I hope it's around crawfish season so one of us might be able to invite you to a boil. If not, there are always restaurants. Tailgating is the best here too.

born and raised in louisiana - i grew up just west of new orleans and lived on the famous river road that winds around the levee. i now live in the mountain west. it is a fact - you take the girl outta louisiana but you can't take louisiana outta the girl! and i have converted my western born husband to louisiana cuisine. i love western style cooking - but - i get soOOO hungry for my home food! i can tell yall were enjoying the process and the results! shrimp, chicken, and sausage gumbo is my favorite! red beans and rice are a mainstay. louisiana is a food destination, a fun rewarding journey!!! and my home folk are the sweetest :)

When the husband asked about washing the rice a thought flashed through my mind. In America they some how clean the rice pretty well. So it is common for us to now wash it. But other places it is not the same. Next time for your situation washing is not bad if that is what you normally do. It seems like your cast iron is new, so it may not have a good build up of coating. Tomato products (acidy foods) can flake off the coating. It is not horrible because you can recoat the the pan and it is back. Just to be fair know what can happen and make a choice for your family. They are a great way to get some Iron into you, I love them.

Looks delicious, British guy here living in Michigan but travelled all over, regarding the shrimp question I always lightly fry my shrimp separately in butter with Cajun or Creole seasoning and then for those who want shrimp they can put them on top. My personal preference for moisture level is just how you’ve done yours, I don’t like it too sloppy. Cheesy garlic toast (bread) is also a nice accompaniment. One final thing, always have a bottle of good quality hot sauce to hand for those who prefer it on the spicy side. You have to visit New Orleans, the food is amazing, doesn’t matter where you eat, it is all good quality. The history and vibe are also enjoyable, but don’t stay too long, there are plenty of other interesting places to visit.

Best I can come with for the pronunciation of oregano, Oh Ray Gone No. Looks good. Warm ya up on a cold day. Some crusty bread with a bit of spreadable butter or honey cornbread. I can’t do super spicy but I suppose you can divide into 2 pans mix the super spices together and remember which was which.

Ok there are two types of jambalaya Below Gonzales ( more tomato based) and above Gonzales ( no tomato) . The city of Gonzales in Louisiana is the jambalaya capital of the world. They have a jambalaya coook off festival every year. In fact you will find food festivals all over Louisiana all year long

Here's a recipe that's not only easy, but it's to die for: MARINATED CHUCK ROAST 1 cup soy sauce 1/2 cup pineapple juice 1/2 cup white cooking wine 1/2 cup dark brown sugar 1 tablespoon garlic powder 1 tsp black pepper Mix all ingredients into small pot (need a double batch for larger roasts). Cook on medium heat and whisk until brown sugar is dissolved. Let it cool down. Put marinade and roast into gallon sized freezer bag. Let out all air before closing. Put in fridge for 24-36 hours, turning every 8-12 hours. Then grill to desired temperature (medium to medium well works pretty good). This is my go to at least once a month.

I don't think Gumbo is really harder, maybe a little more technical, but you've mastered all the steps throughout all the other things you've made. I doubt you'll have a problem. I would think the hardest thing would be if you can find all the ingredients. Okra is a mainstay in Gumbo and I'm not sure y'all have fresh Okra there. Your kiddo is an awesome adventurous eater, that's amazing. ❤

When young we use to have Jambalaya Throw-Downs, old style Pioneer cast camp cauldron on a wood fire, everyone would grab whatever Veggie they wanted from home, arrive & get the Mirepoix, spices and hard smoked meats for flavor all started cooking, then we all spread out into the forest, whatever we were able to hunt was brought back, cleaned and put in the pot. While it's cooking down all day we get to behave like wild Mohicans, it sometimes got intense.

Hey y'all, my name's peter and i'm originally from New Orleans. So...pilaf is commonly rice cooked in stock and not generally a La. dish, while jambalaya is rice cooked in gravy made with roux.

Growing up in Texas and being a next door neighbor to Louisiana, and having spent a great deal of time there (even 1 year of college), I would like to suggest that if you are big coffee drinkers, you at least try one cup of Chicory coffee. It's definitely an acquired taste and many people don't care for the very strong taste. Personally, I am not a coffee drinker at all. I prefer hot tea, but if you are a coffee drinker and are in Louisiana for a first visit, I do suggest trying at least one cup of it.

I am currently living in Florida USA but I was born and raised in Louisiana, My mothers side of the family was coonass (Cajun and no worries we don't find the nickname perjorative ;-) ) You did a great job on the jambalaya. I fix it several times a month myself. as the the ammount of liquid it can vary from personal tastes. As stated in other posts the roux and file powder are key to a good gumbo, as to okra I personally prefer mine without but it is used in most recipies. Another fun one you might like to try is a Muffaletta sandwich and though the bread will be hard to locate I am sure you could manage to bake a nice loaf for it. A note on the bacon - when bacon is called for in a recipe from the USA, it is what you would call 'streaky bacon,' and would render more grease than yours did. Here in the US, what you used would be called 'Canadian bacon,' in Canada just 'bacon' or 'back bacon.' BTW, I love bacon of all kinds!

The only important ingredient you’re missing is tasso, which is a heavily smoked ham. It adds incredible flavour to this dish and while it’s hard to find outside of Louisiana, you should try substituting it with some other heavily smoked ham, bacon or sausage.

Be sure to re-season your cast iron skillet after cooking anything tomato-based in it. The acid in the tomatos leaches out the oil seasoning.

Honestly I like how Brits pronounce things. Vitamins makes me laugh every time. It just sounds silly to my ears. Love you guys! As far as Gumbo I love it and I hate Okra so I don't have Okra in mine. You can get it with or without Okra in New Orleans so it is okbto leave it out.

Texture looks great to me. I think the seasoning being in the rice and throughout the meat is what is best. I saw some saying it was too dry, but it should kind of all stick together a bit - it is not supposed to be watery. The only difference is we typically dice our chicken a bit smaller or "shred" it up a bit, but if you like the bigger chunks that is fine too.

This may seem like too much of a good thing, but if you make jambalaya with chopped shrimps, the result makes a wonderful "topping" for a serving of many kinds of fish -- such as sole, halibut, cod.

I was watching you cook and for some reason I thought it was gumbo you were cooking. I kept thinking nope not with the okra. Then you didn’t add it and I reread what you were making. I do like this. Gumbo that I’ve had was with shrimp and okra. I can’t eat it anymore with the shrimp and allergies but okra gets slimy when cooked and I can’t swallow it.

Great job! The moisture level looked good to me, you want the liquid soaked into the rice. I think most people eat jambalaya with cornbread or maybe a crusty piece of bread.

It is a must try with chicken hearts and liver. Shrimp is always a great protein to pair with any rice dish. Nothing is better than jambalaya with bloody boudin pieces in it.

Looks sooooo good....great job. Alana has no fear, she dove right in...no fear. I wonder if there is anything the she doesn't like? Also, i have seen Alana's name spelled two wys in comments for awhile now... Is it with an A or an E? I could have sworn that the videos from when she was a newborn i saw it only spelled with an A. I dont want to keep mispelling her name, she deserves that for being such an awesome baby all this time, and now such an awesome toddler.

Gumbo is an African word for Okra. As a meal there is Gumbo (which uses Okra) and File Gumbo (which thickens by the addition of File in place of Okra.) After that there is no NORMAL, since Gumbo was essentially 'soup from left overs.'. I would go with a seafood Gumbo. This could involve half of a blue crab (literally cut down the middle - nose to tail) in the bowl, shrimp (preferably from Louisiana), possibly oysters (mostly raw) along with chicken bits, sausage (Andouille preferred), also ham, turkey and/or alligator if you can get some. As with most Louisiana recipes, you'll need to make a roux (burnt flour - equal parts four and oil - preferably Dark brown.) As for tomatoes - if doing Cajun, NO!, if doing Creole - YES!

That's definitely more Creole than Cajun. I am 100% Cajun, so I was raised on straight Cajun cooking. My dad was the oldest of 10 children (all boys) and one of his chores was to help cook for that crew, He was an incredible cook.

I recommend Chef Isaac Toups's gumbo recipe, you can find it on RU-vid to get a good visual when cooking the roux. It's a basic, simple, and no frills Cajun gumbo to start with. Besides rice, i recommend making some basic mayo, mustard, eggs, and seasoning, potato salad. It's commonly a side to gumbo here in Louisiana that is often eaten with the gumbo.

You need some rustic homemade bread loaf to clean the bowl, and even moreso when you advance to gumbos or cippinos! Gotta get past that seafood dislike though . . . Truly surprised at how often I hear of Brits that don’t enjoy seafood(?!)

Most Americans I've heard say "Oregano" stress the first and fourth syllables (OR-eg-an-O) instead of the iambic pronunciation Mrs. H is using (OR-eg-AN-o)

Ooooooh that looks good! I've got some Creole ancestry on my mother's side, but her family didn't hand any recipes down. ☹️ it looks like one for me to try. I'm not keen on seafood either, so definitely sausage and chicken. BTW, that had many of the ingredients to make your own Cajun seasoning, so you could make Cajun fries! Several good recipes online. Including one that's the same as Five Guys! And I found that they use McCormick's Culinary Bayou Cajun Seasoning, according to various posts from former employees. Only that costs around $18 a largish jar, and you can make it much cheaper. Paprika (preferably smoked), onion powder, garlic powder, oregano, basil, cayenne pepper, white pepper, black pepper, kosher salt are the basics. There's also thyme in some. I have all of those, I'm going to make some tomorrow and cook some frozen steak fries with Cajun seasoning on them. Nom! Along with crispy fish sticks.

Oregano pronunciation: OR-AY-GUN-O. At least that's how I say it. I put a little Italian seasoning in my spaghetti sauce for dinner tonight which includes oregano.

Surprisingly that no one said anything. A cast iron Dutch oven is used both as a frying pan and CASSEROLE dish. From stove top to oven in no step in the middle. Just pop it in

OH DEFINITELY VENTURE DOWN!!! SO MUCH TO DO> O gp back about every 6 or 7 years...go in the winter...never during mardi gras with kids. Halloween is a blast...look for weird things like pet parades...and dont drink before getting there, and take it easy. It can be very liong days. Costs a fortune to eat right though, sio plan accordingly...the hot dog trucks (trust me, get some) come out REALLY late and are gone by sunrise.
