Brownie Melt Cookies
Yields: 10 cookies
Ingredients:
•⁠ ⁠100g unsalted butter (room temperature)
•⁠ ⁠55g caster sugar
•⁠ ⁠95g all-purpose flour
•⁠ ⁠25g unsweetened dark cocoa powder
•⁠ ⁠1/2 tsp instant coffee powder
Instructions:
1.⁠ ⁠Beat the butter with a hand mixer until creamy, about 30 seconds.
2.⁠ ⁠Add the sugar and mix on medium-high speed for 1 minute.
3.⁠ ⁠Gradually add the flour, cocoa powder, and instant coffee, mixing on low speed until well combined.
4.⁠ ⁠Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 45 minutes.
5.⁠ ⁠Preheat the oven to 180°C (350°F) for 30 minutes.
6.⁠ ⁠Remove the dough from the refrigerator and shape it into balls or your preferred shape (about 20g each).
7.⁠ ⁠Bake at 180°C for 12 minutes.
8.⁠ ⁠Let cool on a cooling rack before serving. Enjoy!
