Brownie Melt Cookies
Yields: 10 cookies
Ingredients:
• 100g unsalted butter (room temperature)
• 55g caster sugar
• 95g all-purpose flour
• 25g unsweetened dark cocoa powder
• 1/2 tsp instant coffee powder
Instructions:
1. Beat the butter with a hand mixer until creamy, about 30 seconds.
2. Add the sugar and mix on medium-high speed for 1 minute.
3. Gradually add the flour, cocoa powder, and instant coffee, mixing on low speed until well combined.
4. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 45 minutes.
5. Preheat the oven to 180°C (350°F) for 30 minutes.
6. Remove the dough from the refrigerator and shape it into balls or your preferred shape (about 20g each).
7. Bake at 180°C for 12 minutes.
8. Let cool on a cooling rack before serving. Enjoy!
