In sweden a delicacy is smoked salmon fins.... so sad to see him throw that in the river QQ I also remove that extra meat you forgot on the back bone, it's more than you think, then you can also cook some great soup on those bones, fish stock made the right way is insanely good. Fish stock is great with seafood, mushroom and scallions.
Sushi is great I'm trying to make my own and wanted a set of knives to do so on a budget are their any you recommended because I dont want to drop 150$ on a knife just to use a couple of times
Not dinging the knives because im sure they are great, and the video is well made and informative, except saying all the bones were gone. he removed the rib bones, but not the pin bones, for which you would need needle nose pliers or something of the sort. just trying to educate people learning how to filet a salmon, i wouldn't want someone to choke on a salmon pin bone, which from experience, is not very fun
